I can't stop myself, but I've really become a real fan of Macrolepiota procera or " Lépiote élevée " in French ! I have to say that this recent passion is almost working against my desire to discover and learn to recognize other mushrooms. In fact, these are found in fairly large quantities just above our house in the large field bordering the forest.

It's a stroke of luck, of course, but as I know I'll find them every time, I figure I don't necessarily need to go any further to find them. And I'm sure there are others that could be just as good, if not better. I'm thinking in particular of ceps and other boletus !

Here's a board to help you recognize them, but above all, never take unnecessary risks! It's better to miss out on a real treat than risk ending up in hospital or the cemetery !

These are the two stages in which I find them most frequently. On the left, the younger ones, which are apparently easier to digest... although I didn't really feel any difference. And on the right, you get the idea, the older ones.

I know that on this point (and others) opinions differ, but I always prefer to rinse them in cold water with a little vinegar, which generally scares away quite a few insects and other plant debris.

Cut into medium-sized pieces, I sautéed them in a little olive oil and butter, a mixture in which I had previously browned some red onions and a little garlic...

For the record, this addition of mushrooms doesn't make up the whole of our dish, but they do come with - or accompany - quinoa, steamed broccoli and two fried eggs with a little chopped fresh coriander on top.

Look around you, so many things are available and edible. And above all, don't think that these were only good for our ancestors and that we are more evolved because we have a different technology. Broadly speaking, our bodies and brains are the same !

Je ne peux m'en empêcher, mais je suis vraiment devenu un véritable amateur de la Macrolepiota procera ou "Lépiote élevée" en français ! Je dois dire que cette récente passion joue presque contre ma volonté de découvrir et d'apprendre à reconnaître d'autres champignons. C'est bien sûr une chance, mais comme je sais que je vais en trouver à chaque fois, je me dis que je n'ai pas forcément besoin d'aller plus loin pour en trouver. Et sûrement d'autres qui pourraient être aussi bon sinon meilleurs. Je pense notamment aux cèpes et autres bolets !

Voilà une planche qui pourrait vous aider à les reconnaître, mais surtout, ne prenez jamais de risques inutiles ! Mieux vaut ratez un véritable délice que de risquer de finir à l'hôpital ou au cimetière !

Voilà les deux stades dans lesquels je les trouve le plus fréquemment. À gauche, les plus jeunes qui sont apparement plus digestes... même si je n'ai pas vraiment senti de différence. Et à droite, vous avez compris le principe, les plus vieux.

Je sais que ur ce point (et d'autres) les avis divergent, mais je préfère toujours les rincer à l'eau froide avec un peu de vinaigre ce qui fait généralement fuir pas mal d'insectes et d'autres débris de végétaux.

Coupés en morceaux de taille moyenne, je les ai fait revenir dans un peu d'huile d'olive et de beurre, mélange dans lequel, j'avais précédemment faire dorer quelques oignons rouges et un peu d'ail...

Pour le coup, cet ajout de champignons ne représente pas l'entièreté de notre plat, mais ceux-ci sont accompagnés - ou bien accompagnent - du quinoa, du brocoli à la vapeur et deux oeufs au plat avec un peu de coriandre fraîche hachée sur le dessus.

Regardez autour de vous, tellement de choses sont disponibles et comestibles. Et surtout, n'allez pas penser que cela n'étaient bons que pour nos ancêtres et que nous sommes plus évolués par ce que nous avons une technologie différente. Dans les très grandes lignes, nos corps et nos cerveaux sont les mêmes !

I like them fried, ideally in a wrapper like "Wiener schnitzel". Very good.

I think that's why our ancestors were able to live longer. They didn't mince on properly utilizing all the veggies and edibles around them. You're doing really well providing food for yourself with your environment @anttn. Well-done.🤗

It's rare to find mushrooms that big where I live, even though the mushroom species are more diverse, most of them are not edible.

🤭 Copy that! Although, there are some little mushrooms in my yard that look like chocolate chip cookies. Will those be nutritious 😂? Will they be tasty?
