SIMPLE AND EASY VEGAN HOMECOOK: BRAISED BEAN SEEDLING RICE AND STEAMED MUSHROOM PASTE TOFU | 家常素食~香菇素肉干豆苗焖饭和蘑菇酱蒸豆腐~
Hello my dear Foodies!
Yesterday I went to the nearest wet market to buy some fresh vegetables. I saw the bean seedling were very fresh and bought some home. Besides that, I also bought red chili, corianders, old ginger, tofu and Enoki mushrooms for preparing to cook dinner for my family.
Today let me share with you an easy and simple homecook vegan meals: Braised Vegetarian Jerky Bean Seedling Rice and Steamed Enoki Mushroom Tofu with Mushroom Paste.
The ingredients for Steamed Enoki Mushroom Tofu with Mushroom Paste such as tofu, Enoki mushroom, sweet corn, red chili, corianders and mushroom paste. The condiments are vegetarian oyster oil, mushroom powder, sesame oil, salt, and pepper.
Firstly, rinse Enoki mushroom, red chili, corianders, and also tofu and sweet corns. Then cut the tofu into slides and place in the plate. Pour in a little of sesame oil, Vegetarian oyster oil, mushroom powder, salt and pepper, and wipe on the tofu.
Place the Enoki Mushroom and Mushroom Paste on top of tofu.
Then put in chili, sweet corns and corianders on top of mushroom paste to create more colourful and presentable look.
Place it on the steamer tray of the rice cooker and ready for steaming.
Next is to prepare the Braised Vegetarian Jerky Bean Seedling Rice. The ingredients include bean seedling, vegetarian jerky, mushroom, ginger, chili, and corianders. The condiments are vegetarian oyster oil, sesame oil, light soya paste, five-spice powder, mushroom powder, pepper, and salt.
First, rinse bean seedling, mushroom, chili, coriander, and ginger, and cut into slides.
Dip the mushroom, chili and ginger slides with condiments such as vegetarian oyster oil, sesame oil, light soya paste, pepper, and mushroom powder. Then put in fridge for dipping about 1-2 hour before cooking the rice. (Better to prepare this 2 hours before cooking time)
After 2 hours, rinse the fragrant rice.
Then put in bean seedling, and add a little of sesame oil, salt and pepper, then can put in the dipped mushroom, ginger, red chili and corianders.
Then place the steamed tray. Cover the rice cooker and press to cook button.
It’s all automatically cook and done. Open the cover, add some fresh corianders to more presentable look for serving.
For the braised rice, put in the vegetarian jerky slides and blend together with other ingredients.
After blending the braised rice, it is done and ready to be served.
It is very simple and easy to prepare this vegetarian meal as long as you have a rice cooker with steamed tray. It is also a healthy choice with balance nutrition. I guess no matter how busy you are for working women, or young couples, I am sure you are willing to do this during the busy day.
