Potato Cakes With Chives And Celery From Garden

Making homemade snacks is often inspired by ingredients around us that are easy to find.

"My wife, I'm hungry," my husband said. Well, he often says that while relaxing after taking a shower after he back from job. Meanwhile, it was still too early for dinner. 🤣 So, I always make him snacks. He's just like a child when he's whining for something to be made.

I'm always happy to be asked to cook something. Moreover, since we got married, my husband has become increasingly picky about food. He said that the food he bought from outside was often not as delicious as it was. Well, it's an honor for me. He always appreciated cooking and never spared any of the food I cooked for him.




I Got Inspiration From Gardens

My garden doesn't have too many vegetables at the moment. I am still grateful that there are several vegetables that I have harvested many times. Such as water spinach, spinach, chives and celery.

Coincidentally, I still have a supply of potatoes in my kitchen. I also had the idea to mix chives and celery with potatoes.

I went to my garden. Oh, my area is really hot today. Even though it's almost 5 in the afternoon, the sun is still hot! I only had time quickly to photograph my chives and celery.

I cut them off and later they will sprout again. I just took a little celery leaves and chives, enough for the potato dough mixture.

So, for this time I will share about potato cakes. Don't worry, the ingredients are very easy.

If you don't have chives or celery, you can replace it with spring onions. Stay tuned!




THE INGREDIENTS

  • 2 potatoes
  • 4 tablespoons of cornstarch
  • chives and celery leaves
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of coriander powder



COOKING INSTRUCTIONS

BOIL POTATOES

Peel and clean the potatoes. Then boil it in previously boiled water. Sprinkle with a little salt. Cook for about 10-15 minutes or until tender.




CHOP VEGGIES

While waiting for the potatoes to finish boiling, we chop the chives and celery leaves.

For the record, cut the chives into short pieces, so they are easier to shape into potato cakes later.




MIX ALL INGREDIENTS

Mix all the ingredients. First I use a fork, then I knead them so that the flour combines perfectly with the boiled potatoes.




SHAPED INTO A SQUARE

I used a box container and a cookie cutter to mold the dough into square shapes.

If you have difficulty, you can just shape it like balls because it won't affect the taste.




FRY POTATO CAKES

Heat oil then fry them until brown. Can only use a little oil. But make sure you have a non-stick frying pan. If you don't have a non-stick pan, then use lots of oil.

Because I don't have a non-stick pan, I use a lot of oil 🥲 so this day will be a cheat day because I use a lot of oil ✌️✌️✌️




THE RESULTS

These are beautiful crispy potato cakes! Serve while warm to keep the surface of the potato cakes crispy.

When they cool, they will become soft and without a crispy texture.

My husband finished these snacks quickly. 🤣 After finishing these snacks, he said that he was full innocently. Well, of course he was full because it was potatoes!

Yes I have air fryer too. But for some short time needed, so I did not use air-fryer. My husband just need quick snack 🤣

Funny I just made a fried dinner too. A Korean vegetable pancake. Very easy. You can use whatever chopped vegetables you have, even potato! You make a batter - 1 egg, 1 cup of flour, 1 cup of water - and then mix in lots of chopped vegetables, whatever you have. Then fry, about 4 minutes on each side. I make a sauce of chilli sauce, fish sauce, sesame oil and rice wine vinegar. So yummy!
