It's Book Club Night!!
Not for me... It's my wife's Book Club. She has nine ladies she gets together with once a month. Mostly everyone makes it, sometimes, one or two miss. Only a few rules for Book Club:
1. Vegetarian Meals
2. Dinner, Drinks and laughter.
3. For the Month of December, no one cooks, we take ourselves out!
Even though it's my wife's Book Club, I've been known to dig in and cook. This meal, the Butternut Squash Lasagna, was my contribution. I roasted some butternut squash, and then, she pureéd it. into the fridge, and then, day of, she built a nice lasagna, with spinach, and some cheese.
Drinks were a nice Red, a nice Rosé, and a nice white... and for the signature cocktail...
Poisoned Apple Ciders!
4 ounces of Apple Cider
1 and 1/2 oz Spiced Rum
1 and 1/2 oz of Pomegranate Juice
Shot of Grenadine
A Dusting of Edible Gold Glitter!
Add it all together, into a cocktail mixer with ice. Shake, and strain into a glass. Don't forget to give each glass a cockatil stirrer... half the fun is the awesome Gold Swirls!

wow.. what an interesting looking meal. I love butternut squash and lasagna .. never considered them together.

It's always fun to try something new.
I've had Butternut Squash Ravioli, and it was wonderful, so I imagine your lasagne would have been even better, especially with the love & care you put into your cooking! Thanks for making us drool, yet again, in PYPT! 😁
