Mushrooms, Leek & Baked Bean STEW

Hey Foodies! So the vegan youtuber avantgardevegan put out a video yesterday but I saw it today and I ended up making almost the dinner he made. I even bought the fake sausage, but I didn't put them in xD

Here’s what I use:

40g of Sellery
140g of Leaks
330g of Zuccini
13g of Garlic
100g of Carrots
100g of Mushrooms
250g of Baked Beans (He wanted Butterbeans, but I don't know where to buy those)
200g of Pasta

He wanted Miso but I used Soya sauce.
I also added some Nutritional Yeast to help get the Umami flavour.

Spices:

Pepper
Salt
Thyme

Instructions & Cooking Times:

Add oil to a pot make it hot :D
Add Sellery, Leaks and Garlic and lets it cook down until it sticks to the pan. Deglaze with Broth (He used White Wine), I used around 1.5L

Add in the Pasta and let it cook for 6-8 min then add in the rest of the things and let it simmer for 2-3 mins until the pasta is fully cooked.

After its done add ½-1 lemon and top it with some seeds or nuts you decide :D
