Hello Dear Witches...!
No sirs, I wasn't dead, and I wasn't partying either, I was without internet all these days, we've gotten so used to the internet that we don't need it immensely, however I took advantage of the time to share more with the family and especially with my little Mathias, and yesterday it was my younger brother's 23rd birthday, I dedicated myself to pampering him, because I think they should all be pampered and spoiled on his birthday.
Since the last birthday of My Mathias, my little brother (yes, I still call him brother, because I still see him as a child hahaha), asked me to make him a penguin cake or ding dong cake, and the truth is that besides wanting to pamper him this is one of my favorite cakes, because it has a lot of chocolate, and who does not love chocolate?. and what I really love about this cake is the combination of flavors it brings with chocolate, whipped cream and cream cheese, a dessert if you want to say simple, but everywhere will make them shine.
With a basic chocolate cake, which was the same one I used for my son's birthday, you can easily get this delicious cake, plus it can be adjusted for vegans, which I love, and soon I'll be making a vegan version of this easy recipe. For now here I will show you how to bake a classic ding dong cake, Enjoy! .

Preparation
For this type of cake I use a round mold to prepare the cake, and the recipe I use to make it, you'll find it at this link. Once the cake is cold, we cut it in half to fill it.
To prepare the filling is extremely easy, with the help of an electric mixer, we beat the cream of milk, and we take to point of snow, we reserved in the refrigerator, while we integrate, the cheese cream with the sugar and then we finish adding the whipped cream. With this mixture we go filling our because or sponge cake.
To prepare the chocolate cover, just mix the condensed milk with the cocoa powder, the tablespoon of wheat flour and water, take to medium heat for about 5 minutes, without letting debate and reserve. Once the sponge cake is filled, we proceed to cover it with the chocolate, particularly with a spoon.

Finally, with a little cream with which we fill our cake, we make the typical white spring that carry the penguins or cupcakes ding dong, the truth is that it is a super easy cake, and what I like most is that its decoration is suitable for me, because in cake decoration I'm very bad.
Seeing my brother's face when I got home and watching the cake, really filled me with joy, and hearing me say "Francis I Love You" after I tried it, gave me to understand that he loved it as much as I did, the mission was accomplished and he was more than happy with his birthday present. And you may wonder why I am happy with my brother's "I love you", because Anael is one of the least effusive children I have ever met, she has a hard time showing her feelings, and that phrase was really a gift for me.
