El paso a paso para la preparación de este platillo es súper sencillo, y lo primero que haremos para empezar con la elaboración de nuestro pollo frito estilo Arturo's es preparar nuestro suero de leche casero (si quieren pueden comprarlo), y para esto agregamos a la leche las dos cucharadas de vinagre y dejamos reposar a temperatura ambiente por 10 minutos hasta que se corte. Y esto es lo que hará que la carne quede increíblemente suavecita!

The step-by-step process for making this dish is super simple, and the first thing we’ll do to start preparing our Arturo’s-style fried chicken is to make our homemade buttermilk (you can buy it if you prefer). To do this, add two tablespoons of vinegar to the milk and let it sit at room temperature for 10 minutes until it curdles. And this is what will make the meat incredibly tender!


Seguidamente en un bol agregamos la harina y la maicena junto con la mitad de las especias y nuestro suero de leche. Mezclamos muy bien hasta que quede una crema ligera y sin grumos, y en este punto incorporamos nuestras piezas de pollo limpias y condimentadas con sal y ajo, asegurándonos que se cubran por completo, y dejamos marinar por 30 minutos como mínimo.

Next, in a bowl, combine the flour and cornstarch with half of the spices and the buttermilk. Mix thoroughly until you have a light, lump-free batter. At this point, add the cleaned chicken pieces—seasoned with salt and garlic—making sure they are completely coated, and let them marinate for at least 30 minutes.


Mientras se marina el pollo, preparamos la mezcla seca y lo que hacemos es mezclar la harina de trigo restante con la media taza de pan rallado fino y el resto de las especias. Removemos bien para que todo el empanizado sea uniforme.

While the chicken is marinating, we'll prepare the dry mixture by combining the remaining wheat flour with half a cup of fine breadcrumbs and the rest of the spices. Stir well to ensure the breading is evenly distributed.


En este punto ya estamos listos para iniciar con el rebozado, y lo que hacemos es sacar cada pieza de pollo de la mezcla líquida, dejamos escurrir un poco el exceso y la pasamos por el empanizado seco, asegurándonos que el pan rallado y la harina se adhieran perfectamente.

Una vez listas, las dejamos descansar en un plato unos 10 minutos antes de freír para que el empanizado se fije bien y no se desprenda.

At this point, we’re ready to start breading. We remove each piece of chicken from the liquid mixture, let the excess drain off a little, and coat it in the dry breading, making sure the breadcrumbs and flour adhere perfectly.

Once they’re ready, let them rest on a plate for about 10 minutes before frying so the coating sets well and doesn’t fall off.


Lo que sigue es freír nuestras piezas de pollo en suficiente aceite caliente en una sartén profunda a fuego medio bajo y por tandas entre 12 y 15 minutos, dándoles la vuelta a la mitad del tiempo, hasta que estén bien doraditos.
