Spicy Shrimp and Rice Noodle Salad 🥗🌶️🥬🦐

- I can't deny it : "Yum" (spicy Thai salad 🥗) is a dish I absolutely love and could eat every single day without getting bored. I just switch up the ingredients based on what I'm craving or what I have in stock in the fridge. It's a dish I can completely design myself , what kind of protein to use, which vegetables to add, the grade of the ingredients, and the quantities.

- In Thailand, Yum is considered a type of street food. However, you'll definitely find it on the menu at any Thai restaurant, regardless of its star rating. In fact, it's very easy to make, and everyone can whip it up at home. The heart and soul of Yum is the dressing. You just need to make a delicious dressing and use fresh, clean ingredients.

- Today, I made myself a Yum for lunch. I chose thinly sliced shrimp as the protein for this dish, with thai rice noodles (Thai called kha-nom Jeen) as the carbohydrate. I enhanced the flavor with some cooked pla ra (fermented fish sauce), which made my Yum even more delicious. And of course, I didn't forget to take pictures of the process to share

🦐 Ingredients
- 200 grams of fresh rice noodles
- 100 grams of fresh shrimp
- 1 tomato, cut into wedges
- 3 tablespoons of shallots,thinly sliced
- 2 tablespoons of celery,cut into pieces
- 1 tablespoon of cilantro,chopped
- 2 tablespoons of carrots,julienned
- 2 tablespoons of fresh chilies,coarsely pounded
- 3 tablespoons of lime juice
- 1 tablespoon of fish sauce
- 1-2 tablespoons of palm sugar
- 2 tablespoons of cooked fermented fish sauce(pla ra)

However, the proportions of these ingredients I've listed are approximate.
🥣 Procedure
- Begin by preparing the shrimp. I will leave the tail on, wash them thoroughly, and then blanch them in boiling water just until the shrimp change color.

Making the Spicy Dressing
- Prepare a mixing bowl. Add the fermented fish sauce, fish sauce, and palm sugar. (The bottle you see in the picture is ready-to-use boiled and seasoned fermented fish sauce. I always keep it in the refrigerator. It's really convenient.)

- Stir until the sugar dissolves. Then, add the lime juice and fresh chilies.

- You don't necessarily have to add everything you prepared; just add gradually and taste the flavor first. The characteristic taste of a spicy salad dressing is sour, salty, slightly sweet, and spicy.

- If the seasoning is too salty, add more sugar or water. If it's too sweet, add more lime juice or fish sauce. If it's too strong, add a little water or sugar. However, you can always adjust the taste to your preference.

- Once the spicy dressing is seasoned and tastes to your liking, add the shallots, carrots, tomato, rice noodles, and parboiled shrimp.

- Toss everything together well. Finally, add the cilantro and celery, toss gently,


- The spicy dressing has a well-rounded flavor.The fresh rice noodles are soft and slippery, absorbing the dressing well and making every bite moist and flavorful. Transfer to a plate ready to serve.

- The fresh shrimp, parboiled until just cooked, are naturally sweet, crunchy, and juicy. When everything is mixed together, it's incredibly delicious. Thank you to everyone who stopped by🥰.
