HUMBA | A Filipino Dish

Humba is a popular dish in the Philippines. It can always be eaten during a festive or any kind of occasion. A funny fact about this food is that it is often given to the visitors when they ask for food to bring home. It's also because this kind of dish will not get wasted easily. It can last for a week or more as long as you will never forget to heat it every day. Don't be fooled by the funny fact about it because it is very delicious.

Humba was cooked from the flesh and fats of pork meat. Added with seasonings and spices to provide a good taste of flavor. Well, I think all of the dishes have good taste because of the seasonings and also the way it has been cooked. Maybe some of you want to learn how to cook this kind of dish so I'll give you the procedure or recipe. Though I'm not a professional cook, most of my knowledge in cooking was based on experience only. To be precise, I learned it from homemade cooking so there are things that might not be that accurate, especially in terms of time.

The Preparation:

Obviously, the main ingredient of this dish is pork. You need to slice it first, not too small or too big a slice either. As a cook, you will be responsible for deciding about this one. Either you'll separate the fats from the meat or not but I prefer not because I found it very delicious when the fats in the meat are well softened.

Getting ready before cooking is very important so when you cook you will not rush in doing it. Peel the spices you need to peel. Slice those you need to slice and gather all the ingredients in one place. This way you can cook it smoothly.

Ingredients:

Of course, you should be mindful of the ingredients you'll use in cooking. But make sure to learn when to use it so the cooking will be perfectly delicious.

  1. ½ meat (this one it's up to you how much measurement you'll cook.)
  2. Pepper (leaves and seeds)
  3. Onion
  4. Garlic
  5. Salted Black Beans
  6. Softdrinks (Sprite)
  7. ½ tbsp. of salt
  8. 1 tbsp. of sugar

Either you'll use a frying pan, casserole, or pot. It depends on how you will see it fit but this time I chose the frying pan. To make sure the pork will be softened I decided to place it in a heated frying pan. I placed the pork with a small amount of cooking oil because the fats in the meat will provide oil. Just make sure you're not frying the meat because what you're intention is to soften the meat. Mix it with a ladle or spoon to avoid the meat being attached to the frying pan. Do it for 20 to 30 minutes.

When you're finished softening the meat, start sauteing the onion and garlic. No need to have a specific time, if you're not a beginner cooker you should understand when to decide that the garlic and onion are enough. Then add the meat that you just softened. Mix and mix it, maybe at least 3 to 5 minutes.

Start adding the pepper, soft drinks, and salted black beans. Use the 237 ml sprite soft drinks but use only half of the bottle. Again, mix it, and after mixing wait until 10 minutes have passed.

After waiting, taste it how it tastes for you. The black beans are already salty so you should taste them to understand if you need to place salt or not. Also, the soft drink has a sweeter taste compared to a small amount of sugar. Just like the salt, you should decide if you'll add sugar or not. This time, as a cook you decide.

Wait for a little longer, after tasting it. Maybe 5 to 10 minutes and you'll say the dish is already finished and ready to serve. As always, we have individual differences in terms of taste. You should not just rely on the recipes but also on your intuition for you to be a good cook or you can serve delicious food.
