My first Kohlrabi soup 🍲🥄

Hello Hivers, I hope you are all well and ready for my next cooking story.
Last week my mother showed up with a chest of kohlrabi. We consider ourselves very lucky since our families (my mother and my mother-in-law) both have a small garden, so we have fresh vegetables and fruits all year round. But kohlrabi is something that we were not used to having. In the past I received only small quantities of this vegetable and we used it as one of the ingredients in mixed vegetable soup. This time my mother gave us quite a lot of kohlrabi and we were staring at this vegetable not knowing what to do.😊

But luckily, I’m part of another family, my Hive family, and just recently I’ve seen a post about the kohlrabi soup https://ecency.com/hive-120586/@katrin-lux/a-homemade-kohlrabi-soup-with-a-hint-of-nutmeg . So, it was my turn to try it 👨‍🍳. Thanks @katrin-lux for the inspiration❗

After reading some more articles, I also found that this vegetable is full of vitamin C and therefore a natural antioxidant. It contributes to the immune system, has beneficial effects on digestion and protects the cardiovascular system. It is low in calories and has many fibers… so there were no more excuses not to try it. And last but not least, the preparation is very simple 😄.

Ingredients for 3 persons:

  • 500 g of kohlrabi
  • 1 onion
  • 1 carrot (I had only a yellow carrots at home)
  • 2 garlics
  • olive oil
  • 2 dcl of milk
  • 3 spoons of sour cream

I washed and peeled the kohlrabi and cut it into smaller pieces.

In a pot I’ve sipped some olive oil and added chopped opinions. I’ve roasted it all a little bit.

In the next step I’ve added the carrot (I’ve grated it instead of cutting it, but it is the same).

I’ve added the chopped garlic and just left in on heat for a few seconds.

As last I’ve added the kohlrabi (cut into small pieces).

Cover all with water and leave to cook until the kohlrabi is soft.

I’ve mixed the ingredients with a stick mixer and added some milk, for a creamier soup. At the end I’ve added the salt.

When serving we added a spoon of sour cream and fresh minced red pepper.

I was skeptical of what the youngest member of the family would say. To my surprise, he ate two bowls of soup 💪. And what are you thinking about my soup? Let me know, what do you think about my soup!
