Corn Pie or Málé

Today I'm going to show you a dessert that my grandmother used to make for us. The Hungarian name of the dessert is málé or kukoricamálé. I don't have her recipe unfortunately, as she knew the ingredients without a written recipe and she had never written it down. For this occasion I had to look for a recipe on the internet and thank God, there are plenty out there to choose from. You just have to type the name of the dish into the magical search box and you're flooded with recipes, one better than the other.

So this dessert is as old as the last century and it was the food or poor. Back in those days poor people had corn as that has been a staple food for ages and with a few ingredients, corn was turned into a dessert. Today it is used by those who'd like a gluten free dessert.

To be honest, I only started to make this corn pie because a few years ago my niece was recommended gluten free diet and with that, you don't have many options for a healthy dessert. Luckily she loved it and I'm making this for her every time she asks me to and for the whole family actually as it's a delicious one.

This is an upgraded recipe, compared to what my grandmother used to make us. This has cherry in it as well, as adding some fruits, especially sour is always a good idea.

The original recipe is from here and please note, I doubled the quantity as it was for a family event.

Ingredients

  • 600g corn flour,
  • 2 packets of baking powder,
  • 200ml sunflower oil,
  • 450g sugar (would have been 500g but it seemed too much and honestly 400g would have been fine),
  • 400ml milk (1.5% fat),
  • 6 eggs,
  • 2 pckets of vanilla sugar(this wasn't part of the original recipe),
  • sour cherries (this wasn't part of the original recipe either),
  • sugar for powdering. source

Method

The method is pretty simple, all you need is a mixing bowl and a mixer.

Beat the eggs with sugar and vanilla sugar, till it becomes white. Add the oil, mix well, then add the milk as well. Mix the baking powder with the corn flour and slowly add to the mix. Add a pinch of salt as well.

I'm always using baking paper, so I lined my baking tray with paper and poured the mix into it. The added the cherries on top. Unfortunately all of the cherries sank as soon as I dropped them into the mix, but that's not a problem, doesn't change anything.

I then preheated the oven to 180C, baked it for 20 minutes, then reduced the heat to 150C and baked for another 30 minutes, till the top became golden brown.

I'm against powdering the top of cakes with sugar as I'm trying to make healthy desserts and adding more sugar to it doesn't make it healthy at all.However, for the sake of the photo, I powdered one piece 😜

And voilà!

The original recipe says you can serve it with jam as well, but I didn't as it has sour cherry in it.

I don't know why grandma's meals taste greater. Most of the recipes I enjoy are from my grandma.

Childhood memories. That's what you got used to as a kid and those early memories are strong. You can try this at home as it's simple, with just a few ingredients.

It looks really great. With the voila detail, I can't say no to that. Who can say no to a delicious cake? It's so weird to me that people used to be able to randomize recipes beyond measure. When I ask my mom for a recipe for something, I ask her how much oil to use and she says a little bit. What do you mean by a little bit haha?

I know what you mean and trust me, I was talking about this with my brother. We both cook and bake, he's excellent at both and we agreed that some things you need to practice and after years, you just know.

And ungraded recipe?😳 It doesn't look yummy but wasn't expecting it to be taste better than your grandma's....u know, it's said that the old always does it better so I actually wasn't expecting it to taste be better. It does looks yummy though and would really love a piece 😁🙃

Wow, looks yummy and it's easy to prepare, I remember my childhood days, we always had corn flour, the simplest preparation I know is, toast with little sugar and it's ready to eat.

"kukoricamálé", that´s interesting :) In my language, corn is "kukuřice" and "malé" means "little" but unlike with many other desserts and meals you have shared with us before, this one is not familiar to me. In fact, corn flour is not used very often in Czech cuisine. But it looks very good ;)

That's interesting. We have the usual "puliszka" or "mamaliga" in Romanian, which is polenta in Italian, but that's not sweet :)

Found it.. Gluten-free indeed.. But sometimes, the flour produced by factories producing gluten can be mixed with gluten too.. The glutinous rice flour I bought in the market has gluten, lol...it's really better to make it at home using grinder just to make sure there isn't gluten...
