Ring that Dinner Bell!

I'm a planner in real life. I like to make lists, and lists of lists, and lists so I don't forget the list. You get the idea. I'm a planner. Meals are one thing I can plan ahead and even shop for before I need it. I don't plan because the meal is difficult, but, rather, because of the schedules we have. Last night was one of those nights. It was only two of us, so that made it really simple. Of course, if I had lasagna or something else ready and waiting, I probably would have changed menus! I'm feeling kabab-ish tonight. I really would prefer shwarma, but, I have been a failure at that, so let's do simple.

A bit of a clickbait, I will admit, but, I wanted your attention and the kabobs on a fast weeknight just cannot hold a candle to a candlelit dinner for two... this weekend, I promise. There are two separate recipes, chicken kabobs, and ginger sesame fried cabbage that I pair together and add a side of rice.


Chicken Kabobs

Ingredients:

1 onion
1 bell pepper
1 zucchini
6 oz chicken thighs
6 bamboo skewers


Soak bamboo skewers in water. I just set mine in a plate of water and flipped them over about halfway through. This helps prevent them from turning to cinders in high heat and was really not necessary on the George Foreman Grill. (Spoiler alert! We are using a George Foreman Grill) If cooking over an open fire or other very high heat, you may want to soak more thoroughly, at least 20 minutes.

Cut up the onion and bell pepper into chunks, taking care with the onion to keep several layers together (I like the way they cook that way better, single pieces tend to shrivel up quicker). I also preserve the center bulb of the onion to put on the skewer (as you can see in a couple of pictures), since I like the way they cook.

Cut the stalk of zucchini off, cut in half crosswise, then in thirds lengthwise. This produces 6 pieces (one for each skewer). Cut each of these 6 pieces into 3 pieces, lengthwise.

The chicken was a boneless skinless thigh, so I trimmed off any large sections of fat/silverskin/tendons and cut them into small bite-size pieces. The meat can be seasoned with a marinade/seasoning of your choice or left plain. I added a bit of salt to mine.

I then separated each of the vegetables/meat into 6 piles. 1oz of chicken and then equally-ish separated the pieces/chunks of vegetables. Each of these piles was for one kabob, to make them all roughly the same size.

For the kabobs, I started with a piece of zucchini on the skewer, followed by an alternating mix of meat and vegetables. Approximately halfway through, I added another chunk of zucchini, then alternated with the rest of the meat/onion/pepper and finished off each kabob with the last piece of zucchini. Repeat for the other 5 kabobs.

Heat George Foreman/grill/oven/grill and cook, rotating occasionally for even heating. The George Foreman only has one heat setting -ON- so I cooked until they were slightly blackened. It always feels like a more authentic grill job when I do that. :)

Serve over ginger sesame fried cabbage with a small bowl of salted jasmine rice. Recipe to follow!


Ginger Sesame Fried Cabbage


Ingredients:


1-3 tablespoons sunflower oil, as needed (or other light oil)
1-2 teaspoon ginger, minced
1 tablespoon garlic, minced
1 small onion, thinly sliced
3-4cups green cabbage, thinly shredded
1/3 carrot, shredded
Generous splash fish sauce
1-2 teaspoons sesame oil
chili pepper oil, optional

Cut shoot-side of the onion off, then cut in half, bisecting the root. Thinly slice from shoot-end to root-end. Leaving the root attached until the very end holds the onion together and makes it easier to cut the thin slices evenly.

Shred cabbage thinly, I aim for 1-2mm. Shred 3-4 cups.

Shred and portion a carrot. This is mainly for color, so add as necessary. Other quick-cooking vegetables can also be added for colors, such as peppers or red cabbage. The skins from zucchini can also be added(use a potato peeler to get long strips of it) if you are using zucchini for another part of your meal.

Heat pan, I used a cast iron pot to help keep oil splatter to a minimum and I like the way it cooks at higher heat. Add garlic and ginger. Cook a few seconds until lightly browned, then add onions.

When onions start to wilt and become slightly translucent, add cabbage and carrots (and any other vegetables you wanted to add for color) and cook, stirring occasionally.

After a few minutes, everything should be somewhat wilted with a few thicker pieces still crispy. Add the fish sauce and sesame oil. Remove from heat and serve. Chili oil can be added for a bit of a kick (or a fresh spicy pepper when the onion is added). Serve on top of kabobs with a small bowl of salted jasmine rice.

The people doing V2K want me to believe it is this lady @battleaxe Investigate what she has been up to for 5 years. Its the next step to stopping this. I do love the differences between British English and American English.

Yes! I was amused when I lived in Europe and how arrogant we were to change the names of things. I am sure that when they came here, they all knew them as courgettes!

Ha! I lived in Florida too, but only for a year. Missing that heat right about now, although summers are pretty wicked there. Yes, some of our spellings are easier at times, but, confusing as all get out for some of the foreigners that come. Many have British ties. :)

Nice plate you assembled the skewers on there. That is the set that I grew up with. I think those dishes were passed to me when I moved into my first house. They are long gone now, but that is a really a classic pattern. Those look delicious. My wife does most of our meal planning. She does the menu for the week then we go shopping on Friday evening. Saturday or Sunday she preps all the meals for the week so when we get home we can just throw the casserole or whatever in the oven and be good to go.

Absolutely! it is the only way to go! I have to agree with you there. If you work or have a busy schedule, it makes perfect sense to not have it so busy you are exhausted just making dinner.

This is an old set of Corelle! I never use it, but, whoever sets the table in my house gets to choose which set we use. Don't ask how many sets we have! Anyway, she loves this set, which she rescued from my mom's before they were headed to Goodwill!

Yes, I am looking forward to the weekend. I was home yesterday, but I was doing work most of the day. It will be nice just to veg out. That is cool about the plates. It really is an iconic set. I just noticed the squeezable ginger in your post. Very interesting. We usually skip the ginger in our Asian inspired dishes because we don't care for it, but being able to squeeze just a bit in might be acceptable.

Try it! I have found that it makes a nice touch to a lot of different meals. The ginger root is stronger and perhaps that is what you don't like about it.

The plates were from my childhood! I can't believe she kept them that long! I am really looking forward to this weekend and I think it is going to be cold and rainy, so that will give me a good excuse to have a down day.

🤤 Omg, this meal is mouthwatering! The Chicken Kabobs looks delicious and for the fried cabbage, I don't know how 'hot' your chili pepper oil is but ginger won't do it for me. I like spicy foods and would add blended or powder pepper to the cabbage.

I love it hot! The chili pepper oil was nice, but I would add some bird’s eye chili (prik kee noo), spur chili (prik chee fah),or karen chili (prik kariang)! They are toasty! :) Ginger was just for the flavor, not the heat. I agree with you! Spice is nice!

I usually use onions, all kinds of peppers, mushrooms ( we love mushrooms) but you have to cut them pretty thick, and I used to put shrimp too.

Thank you for sharing your delicious recipes. I love fried cabbage with bacon or chicken livers, but I make cabbage in lots of other ways. Bottomline, I love cabbage.

Ha! Yes! A girl after my own heart! I love fried cabbage with bacon, and I used to eat them with chicken livers, but, they are so high in cholesterol, I skip it most times. Not all the time, but, moderation. :)

What a beautiful table! That cabbage is going to be a winner in my house. My husband LOVES cabbage - me, not so much. Unless it is well disguised in a stir fry or fresh veggie juice. I loved the green with your chicken kebab. I never think of kebabs when it comes to meal planning .... but then I guess I should start writing lists!!!!!!!!!!!!!!

Kebobs are such an easy prep meal. I sometimes make them ahead so that I only need to grill them quickly for dinner.

Your dinner though, it looks so delightful! With the hubs being Hawaiian we eat a lot of Asian flavor profile things, and your fried cabbage sounds delightful. I mean it checks all the yum boxes for me, ginger, sesame oil, and FISH SAUCE! I love that stuff!

Do you ever use chili infused sesame oil? A few drops of the stuff sends me to drool town I swear!

And those kabobs, dangit, all this fine comestible crafting that you showcased here has started the tum-rumbles, that's it! I am going to find some fodder!

I only remember making kabobs in the summer, when fresh zucchini was available from the garden, and we could comfortably grill outside. And I had lots of help from family members with the assembling and the cooking. I need to remember to try this in the summer, complete with your cabbage recipe.

I don't have a George Foreman grill, although I have known multiple people to have one. When my food looks grilled like that, I'm wanting it to taste like it was cooked over charchols...LOL

My Mom has made them before. She and Tommy use to make them and put them on the outdoor grill. He was really good at grilling.

I gave my first one away because I said I would never use it, then I bought one myself last year. :) Who could resist! It was so inexpensive. I grill all year round, but, surprisingly, it is good.
