Happy Eggs Crack a Smile

There are times when I have to leave breakfast to be made by those that are left behind. The sleeper-inners. You know who you are. Stay up half the night, sleeping in until almost ten. Color me gone by 7 AM. Breakfast is done, put away with only the coffee pot still hanging out. I'm not cruel, I know they need their coffee. This was a quick and easy one of the girls made up because it is easy and basically they are a bit lazy when they get up and there is nary a bowl of porridge left. I ask you, what's a mother to do?

Quick Breakfast: Potato and Egg

Ingredients:

Salt
Garlic Powder
Onion Powder
Cayenne Pepper
A few fragrant herbs from the garden
Basically, open up your spice cabinet and pick a couple that you like
Diced Potatoes
Egg
Optional: bacon, ham, piece of onion


It's easiest if you use Happy Eggs, yes? I won't have any frowny faces around here. They are actually from a local farmer, I trade off raspberry jam for eggs. I have too many and it works out pretty well for both of us. One thing is for sure, those yolks are as golden as the happy eggs Every time one goes in the pan, I am delighted, all over again. So, of course, I want to start with Happy Eggs.

Use enough diced potatoes that will cover the bottom of your mini electric griddle (single serving size, it's only 4 inches, or use a larger one) season potatoes and microwave until soft and warm. I actually dislike microwaving anything, but, this is a quick and easy. Put onto the griddle and use your choice of oil. Approximately 1 teaspoon, give or take. It makes a nice crisp. Close the lid for a few minutes, until they stop steaming, indicating most of the excess water is gone.

-Crack an egg in the center and close the lid again, cooling the egg as you normally would. Make sure to season the egg to taste. I generally season the potatoes liberally and do not season the egg at all.

This actually slides right off the griddle and will come off in one piece to a plate. Not a grand effort, but, it is yummy delicious!

These have a nice color that goes nicely with toast or on its own. Now, one of my daughters drives me crazy as she uses my mom's old Corelle. I promised her, she could have it when she leaves home. I like a few things on hand that are quick and easy to make, without a bunch of fuss! :)

All I have are my words, armed in my mind, written in pen, stand by stand. Oh, yes. Still by hand. It has a different feel. Altered not by keys, backspace, and delete, I write, erase, tear it to pieces and start all over again. And again.

It’s my way. I walk out to the deep end of the page and dive right in.

Indeed… it’s mixed.

Yep, can drink it all day. When I wrote my comment it was still morning for me.
I tend to do a coffee mornings, mid day and around 1600h that’s enough… sometimes evenings but not that often.

Oh!!! You were one of those, yes? I had six brothers that never slept in. I grew up in a house of no sleeper-inners... Neither did any of the neighbors' kids. We would conspire on what to do with our day off from school.

Exactly! I have always gone with the thoughts of How much money do I need to be happy? Not nearly as much as one supposes. There is that balance between comfortable and squeezing. Nobody wants to do that. But, when the birds are singing and the sun is shining? OT doesn't feel worthy. Until the paycheck comes. A Gallon of coffee coming right up! Is it too early for Irish?

Oh! I just came across a recipe for Irish Coffee cake!!! It looks yummy!

Golden yolks ! I like the sound of that . They really look tasty .If I prepare it i would add some onion for sure. Did you prepare enough for the sleeper-inners to eat? Corelle is a brand of dishes that my mom had. (It is shown here in the white dishes with a blue rim) They are nearly unbreakable, so with nine children, that is what my mother bought. :)

I always use onion and sometimes peppers. I do prepare enough for the sleeper-inners. :) Waking up and finding an already prepared meal is the best. Of course, it is what moms love to do, yes?

I do love the golden yolks! They look heavenly. I keep my old egg cartons and put the eggs in them. So, perhaps they are not Happy Eggs, but, I sure am glad to see them!

It very well could be. I will always think of it as older as I grew up with it. I don't dislike it at all. My daughter likes to set her place with it every day. :)

Even when I put a different set out. LOL

They are actually still quite affordable and they last forever because you can drop them and they don't break! :)

I get a dozen fresh eggs delivered weekly from a local farm and they're the best. They come in a variety of sizes and colours; brown, white, blue, and small to large. I'm not picky. They're good!

I'm not picky either! I got duck eggs one week! :) They are massive!!!! I use the Happy Egg carton to put the farm eggs. I just love them. They are the best. Once in a blue moon, I get quail eggs and I really like them best, I think.

I like your farmer giving you a mixed batch. That is fun.

OMG... You are not fussy at all. Do you know I don't love bacon? I tolerate it, but, the bacon hair that I get from making it is so not worth it! LOL The only thing that I absolutely love - okay, two things... is a BLT (OMG! Love at first bite) and a Bacon Cheeseburger. Both unhealthy as heck, but, love, love, love.

I have a newborn at home, plus a 2 year old girl hahahaha so sleeping late is a normal thing in our family, and this breakfast comes like a ring to our finger super fast easy and nutritious.
