Pickled Bamboo Shoots | My Favorite Dish

Hello everyone in the @foodiesbeehive community, today I would like to introduce to you a quite popular dish in Vietnam that can be used for many different purposes, which is pickled bamboo shoots.

Ingredients:

  • Fresh bamboo shoots
  • Chilli
  • Garlic
  • Rice water
  • Vinegar
  • Sugar
  • Salt

Step 1 | Preliminary processing of bamboo shoots

Bamboo shoots are peeled and sliced ​​into thin slices and washed. Then put the bamboo shoots into the jar, fill with water to soak the bamboo shoots overnight. Add 2 spoons of salt and rice water to the jar to make the bamboo shoots white, crunchy and remove all toxins.

Step 2 | Soak the bamboo shoots

Take the bamboo shoots that have been soaked overnight out of the jar and soak it in vinegar for 30 minutes to make it crispier, then take it out and let it dry. Boil water with 1 teaspoon of salt and 2 teaspoons of sugar, then let it cool. Garlic is peeled and cut into thin pieces. Chilies are washed and also chopped. Some chilies may not be cut. Then put all the bamboo shoots, garlic, chilies into the jar, fill with water, cover the jar and soak them for 5-7 days. Then you will have a delicious pickled bamboo shoots.

Usages

The pickled bamboo shoots can be used for many different purposes. Simply, you can eat them with rice and chili fish sauce or with instant noodles. It is also a very popular dish when drinking with friends. In addition, it is also used as an ingredient to cook other dishes such as sour fish soup, fried meat, braised fish,... In general, it is a very easy ingredient to combine to eat with other dishes or to cook other dishes. So you should make a large jar of it because it will be eaten up very quickly.
