Today I want to share with you a delicious recipe of assorted breads in different shapes that I prepared yesterday for my final presentation, which I made today, May 6, of the bakery course that lasted six weeks. I hope you enjoy it as much as we did, my fellow students.

These buns were made following the teachings of Professor Douglas. For this recipe, I was inspired by the last class he taught us, where we learned how to prepare hamburger buns. I decided to put that recipe into practice. For this final presentation, the professor asked us to achieve crunchiness, attractiveness, flavor and aroma, and I tried to get as close as possible to those goals.

Hoy quiero compartir con ustedes una deliciosa receta de panes variados en diferentes formas que preparé ayer para mi presentación final, la cual realicé hoy, 6 de mayo, del curso de panadería que duró seis semanas. Espero que la disfruten tanto como nosotros, mis compañeros de curso.

Estos panes fueron elaborados siguiendo las enseñanzas del profesor Douglas. Para esta receta, me inspiré en la última clase que nos impartió, donde aprendimos a preparar panes de hamburguesa. Decidí poner en práctica esa receta. Para esta presentación final, el profesor nos pidió lograr crocancia, atracción, sabor y aroma, y traté de acercarme lo más posible a esos objetivos.

Without further ado, I show you the ingredients and the step by step // Sin más le muestro los ingredientes y el paso a paso:

-688 grams of all-purpose flour, - 82 grams of sugar, - 15 grams of yeast -2 eggs, - 86 grams of margarine, -240 grams of water, -14 grams of salt, - vegetable shortening to spread the pan.

  • To decorate:
    -Safflower to taste, -1 beaten egg.*

-688 gramos de harina de trigo todo uso, - 82 gramos de azúcar ,- 15 gramos de levadura -2 huevos, - 86 gramos de margarina, -240 gramos de agua, -14 gramos de sal, - manteca vegetal para untar la bandeja.

  • Para decorar:
    -Ajonjolí al gusto, -1 huevo batido.

To begin the preparation, we are going to weigh all the ingredients. Then, we take a portion of the water that we have weighed and use it to dissolve the yeast, adding also a little sugar of the same that we have weighed. Stir well and let the fermentation process begin.

Para comenzar la preparación, vamos a pesar todos los ingredientes. Luego, tomamos una porción del agua que hemos pesado y la utilizamos para disolver la levadura, añadiendo también un poco de azúcar de la misma que hemos pesado. Removemos bien y dejamos que comience el proceso de fermentación.


After a few minutes, let's check if the fermentation has grown and proceed to place the flour in a container, then stir in the water.

Después de unos minutos, verifiquemos si la fermentación ya ha crecido y procedemos a colocar la harina en un envase, seguidamente el agua removemos.


Add the eggs, integrate them and continue stirring.

Agregamos los huevos, los integramos y continuamos removiendo.


Add the fermentation to the mixture together with the sugar, stir and integrate, and knead until a dough is formed.

Incorporamos la fermentación a la mezcla junto con el azúcar, removemos e integramos, y amasamos hasta formar una masa.


Once the dough is formed, sprinkle the salt on the counter, knead and incorporate it into the dough.

Una vez formada la masa, espolvoreamos la sal sobre el mesón, amasamos e incorporamos a la masa.


Incorporate and add the margarine to the dough and knead type V until the gluten develops and the dough takes on flavor.

Incorporamos y añadimos a la masa la margarina amasamos tipo V hasta lograr se desarrolle el gluten y agarre sabor.


Boleamos and place in a bowl to grow for about 5 minutes.

Boleamos y colocamos en un envase a crecer por espacio de 5 minutos aproximadamente.


Then, we separate, cut and weigh the portions.

Luego, separamos, cortamos y pesamos las porciones.


We spread the tray with vegetable shortening. Then, we shape it according to the shape that we like the most and that we learned in the course, and we place it on the tray.

Untamos la bandeja con manteca vegetal. Después, damos forma según la que más nos guste y que aprendimos en el curso, y colocamos en la bandeja.

And before putting in the oven, beat the egg and carefully glaze all the bread portions with a brush, then sprinkle sesame seeds.

Y antes de meter al horno, batimos el huevo y barnizamos cuidadosamente sobre todas las porciones de pan con la ayuda de una brocha, luego rociamos semillas de ajonjolí.


We put the tray in the oven at 180 degrees Celsius, and remove when the breads are completely golden brown.After the time, let them reach room temperature.

Llevamos la bandeja al horno a 180 grados centígrados, y retiramos al ver los panes totalmente dorados. Pasado el tiempo, dejamos que lleguen a temperatura ambiente.


The next day, i.e. today, I transferred the breads to a tray and took them to the exhibition. I was able to defend them, as well as all the others who brought their creations, and we enjoyed sharing our creation with the whole group.

Al día siguiente, es decir, hoy, trasladé los panes a una bandeja y los llevé a la exposición. Pude defenderlos, al igual que todos los demás que llevaron sus creaciones, y disfrutamos compartiendo nuestra creación con todo el grupo.


And that's it!Our delicious creation of assorted breads, with a soft and crunchy texture.
