Fluffy Steamed Sweet Potato Cakes With Yeast (Apam Recipe)

A sweet cake made from sweet potato ingredients can be a delicious snack for an evening snack.

My family and I are still fasting during the month of Ramadan. We did not eat or drink from sunrise to sunset. Entering the month of Ramadan also means there will be lots of sweet dishes on the dinner table to break the fast.

I'm looking for ideas for sweet cakes that can be eaten as snacks and to break my family's fast. In my kitchen, I have a stock of big sweet potatoes. Also, coconut milk. I think it would be great if I made sweet potato cakes in a steaming way.

I have often made steamed sweet potato cakes in general. So, I tried to find another idea. Then, finally, I was determined to make Apam Cakes traditional Indonesian cakes which use yeast in them, so that the texture becomes more fluffy but still soft on the inside.

What is the name of Apam Cakes in your area? Apam Cakes have many variations for main ingredients. Pandan leaves, sweet potatoes, pumpkin, brown sugar, and more.

This time I had a sweet potato. So, I will make Sweet Potato Apam Cakes. Making these cakes does not require a mixer. You only need a balloon whisk and spatula.

Plus, they are quite easy to make. It's just that we need to rest the dough for 1 hour.

For serving, we usually serve with grated coconut. But if you don't use grated coconut then it's not a problem at all because these cakes are already sweet and yummy with no coconut topping. So, enjoy the recipe!




THE INGREDIENTS

  • 200 grams of sweet potato before steaming.
  • 250 grams of all purpose flour
  • 50 grams of tapioca flour
  • 400 ml of coconut milk
  • 175 grams of sugar
  • 4 grams of instant active yeast
  • 1/2 tsp of salt
  • pandan leaves

For toppings

  • 100 grams of coconut, grated
  • a pinch of salt
  • pandan leaves



COOKING INSTRUCTIONS

Prepare a sweet potato. Remove the skin and cut into pieces to make the steaming process easier later. Clean wash. Then, prepare the steaming tool.

Add sweet potato pieces after the water in the steamer has boiled. Steam sweet potato pieces for 15 minutes.

Prepare coconut. I've removed the coconut flesh from the shell and it's ready to be grated. Grate coconut. I use a cheese grater.

Add a pinch of salt to the grated coconut. Then, steam the grated coconut after finishing steaming the sweet potato pieces. Steam grated coconut for 10 minutes.

Prepare a sauce pan. Add sugar, salt, pandan leaves, and coconut milk. Stir them well then turn on the heat. Cook until the sugar dissolves and the mixture boils. Then lift.

In a blender, add steamed sweet potatoes and a little coconut milk mixture.

Then, transfer the sweet potato puree into a big bowl.

Prepare a whisk. Add instant active yeast to a big bowl that has been added with sweet potato puree previously. Also, add a little coconut milk. Don't add the coconut milk mixture all at once. Mix until combine.

Add all purpose flour and tapioca flour. Pour in the coconut milk little by little. Stir well. Mix until the coconut milk mixture is finished.

After all the mixture is mixed evenly into a dough, stir gently with a spatula before letting the dough rest.

Prepare a clean cloth. Then cover the dough with a cloth for 1 hour.

Prepare a steaming pan. Then, look at the dough which has previously been rested for 1 hour.

Stir by turning motion the mixture using a spatula.

Transfer the dough into a molded container that has been smeared with cooking oil beforehand.

Steam the dough for 45 minutes. Make sure the water on the steamer cover does not fall onto the dough. To be safer, you can cover the pan cover with a cloth.

After the cakes are removed, let the cakes cool or warm then carefully remove them from the mold container. Then, you can cut it according to your taste.

Serve Apam Cakes with grated coconut. Sooo delicious!

Well, I only ate one piece of cake because it was very sweet. The rest, I shared with my neighbors and my mother-in-law.

it's funny how fruits and vegetables change in different countries, here the sweet potato is more similar to orange, but I like this sweet potato more, the color makes the cake more provocative, if I recreate the recipe people will be confused and think it's pumpkin cake because of the color hahaha, excellent recipe thanks for sharing it.✨

in Indonesia, we have some color, orange and purple are favorite. but purple color is expensive type :)

I desperately want to try these. I've never attempted anything like this. The coconut here is not fresh so making this would never be as delicious as yours. It's the kind of sweet snack I would love.
