The day dawned cloudy announcing rain, so I felt like baking something delicious for snack and, thus surprising my husband when he got home from work, I remembered that I had bought some dried apricots to make a sauce; but I'm going to take a few to prepare some delicious cupcakes.
El día amaneció nublado anunciando lluvia, entonces me dieron unas ganas enormes de hornear algo rico para la merienda y, así sorprender a mi esposo cuando llegue del trabajo, recordé que había comprado unos orejones de albaricoque para hacer una salsa; pero voy a tomar unos cuantos para preparar unos deliciosos ponqués.
Ingredients:
1 plain yoghurt
4 eggs
½ cup dried apricots
½ tablespoon ground cinnamon
Vanilla to taste
½ tablespoon baking powder
A pinch of salt
With the yogurt glass we are going to measure:
½ cup of neutral oil (I used sunflower oil)
1 ½ sugar
3 wheat flour for pastry
Mix for 6 cupcakes
Ingredientes:
1 yogurt natural
4 huevos
½ taza de orejones de albaricoque
½ cucharada de canela en polvo
Vainilla al gusto
½ cucharada de polvo de hornear
Una pizca de sal
Con el vaso del yogurt vamos a medir:
½ vaso de aceite neutro (yo utilicé de girasol)
1 ½ de azúcar
3 de harina de trigo para repostería
Mezcla para 6 ponqués
Elaboration process / Proceso de elaboración:
🌸 I cut the dried apricots into small cubes, you can also use raisins or some dried fruit.
🌸 Los orejones de albaricoque los corté en cubos pequeños, también puedes utilizar uvas pasas o algún fruto seco.
🌸 We sift all the dry ingredients, the flour, the baking powder and the cinnamon.
🌸 Tamizamos todos los ingredientes secos, la harina, el polvo para hornear y la canela.
🌸 Beat the eggs with the vanilla, a pinch of salt and add the sugar.
🌸 Batimos los huevos con la vainilla, la pizca de sal y le añadimos el azúcar.
🌸 Then we add the yogurt and mix to incorporate it into the previous mixture.
🌸 Luego le agregamos el yogurt y mezclamos para incorporarlo a la mezcla anterior.
🌸 Add the dry ingredients and mix with the help of a whisk.
🌸 Añadimos los ingredientes secos y mezclamos con la ayuda del batidor.
🌸 Now is the time to incorporate one of the great protagonists of this recipe, our apricot dried apricots.😄
🌸 Ahora es momento de incorporar uno de los grandes protagonistas de esta receta, nuestros orejones de albaricoque. 😃
🌸 We take the mixture to the molds and bake for approximately 1 hour at 180 degrees Celsius, remember to have the oven preheating.
🌸 Llevamos la mezcla a los moldes y horneamos por aproximadamente 1 hora a 180 grados centígrados, recuerda tener el horno pre calendo.
