菠萝派

周末买的菠萝,剩下一半那就拿来做个菠萝派吧,第一次做,竟然成功了,来看看怎么做的吧。

首先揉面团做个派皮,60g软化好的黄油,加入150g的面粉、15g的糖、还有一个鸡蛋,混合均匀后,用手揉成光滑的面团,然后放冰箱冷藏半个钟。

冷藏的时间用来做馅料,半个菠萝切成丁,50g的水兑5g的玉米淀粉做出淀粉水,还有10g的糖,锅中加入10g黄油,再依次加入菠萝、糖和淀粉水,煮至粘稠即可。

面团取出三分之二擀薄,大小比模具稍大。

把派皮小心地铺在模具里面,派皮有一定粘性,会沿着模具满满滑下去,用手扶好就可以了,如果是浅的模具就好操作很多,再用牙签扎上一些小洞。

铺上菠萝馅,把四周的边缘折回来。

剩下三分之一的面团擀薄,切成1厘米宽的长条,用编织的手法铺在派的上面,就是一根交错一根地。边缘会有多出来的,可以用刀切掉,再把四周稍微按压整理一下。

刷上一层蛋液,180度放进烤箱烤20分钟,然后再拿出来刷上第二层蛋液,最后再烤10分钟。

登登登登~新鲜出炉的菠萝派,酥脆的派皮,包裹着酸酸甜甜的内陷,还有菠萝的香味,十分好吃。一个人就能吃下一整个,还不会腻。
