  • 2-3 kaffir lime leaves (optional, but recommended for authenticity)
  • 1 tablespoon fresh lime juice
  • Fresh Thai basil leaves, for garnish
  • Cooked jasmine rice, to serve

Instructions

  1. Sauté the Curry Paste: In a large pot or wok over medium heat, add the curry paste and stir-fry for 1-2 minutes, until fragrant. If the paste starts to stick, add a little coconut milk or oil to loosen it.

  2. Add the Coconut Milk: Pour in the coconut milk and stir until well combined with the curry paste. Let it simmer for a few minutes to infuse the flavors.

  3. Add the Protein: Add the sliced chicken (or tofu) to the pot and cook for about 5-7 minutes, until it's mostly cooked through.

  4. Add the Vegetables: Add the onion, bell pepper, carrots, and snap peas or green beans. Stir and let the mixture simmer for another 5-7 minutes, or until the vegetables are tender but still slightly crisp.

  5. Season the Curry: Add the fish sauce, sugar, and kaffir lime leaves (if using). Stir and taste, adjusting the seasoning as needed. You can add more fish sauce for saltiness, more sugar for sweetness, or more curry paste for heat.

  6. Finish and Serve: Stir in the lime juice and fresh Thai basil leaves. Let it cook for another minute, then remove from heat.

  7. Serve: Serve the Thai green curry over cooked jasmine rice, garnished with additional Thai basil leaves if desired.
