It's #FruitsAndVeggiesMonday once again, and I wanted to share one of my family's favorite foods, my spicy okra curry.

The okra isn't the least bit slimy, so you'll find this recipe an easy way to get your kids to eat okra too.

ย  ย  ย Okra is one of the reasonably affordable foods in Suriname, and now that I think about it, okra seems to be relatively affordable wherever it is grown.

ย  ย  ย Also known as "ladies' ๐Ÿ–– fingers" by some countries, okra is chocked full of nutrients and antioxidants, and can even lower your risk of heart disease. I hate to admit the reason we a lot of okra is simply the price per kilo, but at least it happens to be healthy also.

ย  ย  ย Carbon is your friend in this recipe. You actually want to burn the okra a bit, but not too much, for a roasted smoky flavor.

Okra Curry ๐Ÿฅฃ Ingredients

Primary Ingredients
โ‹† okra - 16 to 20
โ‹† Madame Jeanette chilies - 2
โ‹† cumin seeds - 1 tsp
โ‹† mustard seeds - ยฝ tsp
โ‹† kalonji - ยฝ tsp
โ‹† besan - 2 tbsp
โ‹† sea salt - 2 tsp
โ‹† palm sugar - 1 tbsp
โ‹† garam masala 3โ„4 tsp
Coconut-Peanut Powder
โ‹† coconut powder ยผ cup
โ‹† raw peanuts - ยผ cup

Tamarind Spice Paste
โ‹† tamarind pulp - 1 tbsp
โ‹† grated ginger - 2 tsp
โ‹† turmeric powder - ยฝ tsp
โ‹† chili powder - small sprig

๐Ÿ‘จโ€๐Ÿณ Cooking Method ๐Ÿ”ช

Carbon Is Your Friend

ย  ย  ย This recipe is fairly simple, but super delicious. The key is getting some charring on your okra so that the curry takes on a roasted flavor.

ย  ย  ย If you aren't psychopaths like us, you don't have to add the two Madame Jeanette chilies to this recipe.

STEP 1

Wash the okra and chili peppers, then slice down the middle lengthwise.

Stir-fry them in 2 tbsp of oil until a bit charred.


Smart curry ninjas remove the seeds from Madame Jeanette chili peppers first, then set aside ๐Ÿฑโ€๐Ÿ‘ค

STEP 2

Finely grind the peanuts and coconut powder, reserve.

Overgrinding will result in coconut-flavored peanut butter ๐Ÿฅฅ

STEP 3

Grind the tamarind pulp, ginger, turmeric and chili powder with ยผ cup water.

Make sure all tamarind seeds are removed if grinding via machine, because your teeth ๐Ÿฆท

STEP 4

Respectfully and calmly stash your "curry kit" near the stove, as you will need things in quick order.

Okra is actually a fruit and Donald Trump is a fake ginger ๐Ÿ‘จโ€๐Ÿฆฐ

STEP 5

Heat 2 tbsp of oil in a pan, then fry your mustard seeds and cumin seeds a few seconds.

Quickly add the coconut-peanut powder, reduce heat to low-medium, and toast until fragrant, stirring often.

Add the tamarind paste and reduce heat to low.

STEP 6

Work the mixture into a paste while constantly turning and spreading.

Keep doing this for a few minutes until you smell roasted tamarind niceness.

Look at yourself in the mirror and know that you just made the world's best curry paste ๐Ÿ‘ฉโ€๐Ÿณ

STEP 7

Add 3 cups water, sea salt and palm sugar, then simmer on low heat uncovered for 5-6 minutes.

The smell of your house will now begin to attract curry zombies, so be careful ๐ŸงŸ๐ŸŒถ๏ธ

STEP 8

Add the okra, chili peppers and garam masala, and return to a simmer.

Simmer with pot covered for another 4-5 minutes.

You've done it, you are a Hive chef my friend ๐Ÿค

ย  ย  ย "What, no garnish?" Yes, I dropped the bar on this one. Normally I'd make a chili flower or sprinkle some culantro, but this is soulfood, it doesn't need dressing up.

ย  ย  ย You don't need to add the Madame Jeanette chili peppers, most people would find the recipe spicy enough, but our family is a little crazy.

Thanks @trincowski. Are you still in Portugal? If so, surely a major town might have an Indian shop where you could get a few hard-to-find things.

Hoepfully you can taste these dishes someday if we can ever re-open our restaurant in a place we can call home. For now we've lost our savings and our surviving day-to-day just like many others in this post-corona fallout.

You guys make the most kick ass foods that I would give anything for. I have not seen certain ingredients that you use and I'm always afraid of okra but I know for sure this dish would make me dance!

I'm roughly familiar with some Nigerian foods and recipes, but never had any okra dishes before. I worked with a lot of Nigerian and Filipina/o English teachers in Cambodia, and the Nigerians would always make at least one vegan dish for me to try.

You all have some pretty good food and cooking techniques, but I need to learn some Nigerian veggies dishes. Why don't whip up a Nigerian okra recipe? I'd love to see it. Thanks for stopping by @wolfofnostreet.

Yes, I know you mean to trade the okra for roasted wax peppers. I like that style too, but wax peppers are too expensive here and the @KidSisters won't eat them.

Thanks @gingbabida, yes the Madame Jeanette peppers are for psycopaths, the curry is spicy enough without them. The kalonji seeds may be hard to find in certain countries. Some people call it black cumin and I've also heard them called nigella seeds.

I see. Black cumin is a familiar spice, though I don't know if we have it here. It's harder to find imported spices now that we are still suffering from this pandemic, but I hope I can find those. If not, I'll settle with what we have at the moment.

I'll have to remember this one when the okra starts coming in here! I only just started cooking with it last year, but it has definitely "grown" on me. I think in just a short while I'll see it at every stall at the market. ;)

Okra is generally cheap, although I can't remember it's status in the USA. Once the hipsters discover things, the prices goes through the roof. As a kid, I only thought okra could be deep-fried, as I never saw anyone do anything else with it.

Haha, oh my gosh, too true about the hipsters. It's pretty darn prolific here soon, so I don't think it's too expensive. I'm sure if we wanted to we could try growing it, but it hasn't "grown" on me that much just yet to tempt fate and get a whole heap of it, haha!

All the ingredients we got here in Suriname, although certain Indian spices are really hard to find. We generally have luck at the Indian cultural supply stores.

Yo Justin, we both seem to love simple but amazing food :)
At this moment my girlfriend is making her first magical meal (a red thai curry with potatoes and eggplant) after being away for 3 months (plus two weeks of quarantine)

You guys don't live far from where I grew up as a kid. I never really left the neighborhood, about one kilometer east to be exact :) so the distance will not be an issue. We should eat! ehm..meet! :)

pps: while writing this I went back to look at the pictures so I can try to imagine it passing through my chewing apparatus and tasting tool... Ow man...the mind is powerful

Nice imagination by the way. Garam masala wasnโ€™t easy to find, but the local Suriname masala powder is everywhere. I hate to say the flavor is too different to use it as a substitute.

Weโ€™ve always found most Indian spices at the Indian cultural supply stores, and on occasion even the Chinese shops.

I think I saw some at Wengโ€™s on Franchepanestraat the other day.

Yeah, I agree on the available masala powder part. Much of the good stuff some folks get from Guyana or Trinidad. There is a marketplace not far from where I am that has many different kind of spices. Sometimes they have those rare difficult to find stuff if lucky.

I would recommend leaving the chili peppers out for most folks. Another way of making this is to replace the okra with wax peppers or some other okra-sized peppers that aren't too spicy.
