Is there a way to know how much you're converting each day? I wouldn't want to have to code a program to read that lol, but it sounds like an interesting piece of data to have in your reports, stuff like "converting 90 Steem each 6 hours on average".

It is being worked on. Using the steemit API one can see that right now there is 1493.023 SBD conversion in progress which comes to about 426 per day. Over 7000 SBD total has been converted since the start.
