A light and delicious meal, to take you through the the day, to your dinner. Better than junk food.

Such an easy way to use leftover pasta dishes

Grease a muffin tray

Mix all your leftover pasta dish with two whole eggs and some of your favourite spices, such as Portuguese spice, cayenne pepper, salt, pepper and grated cheese.

Spoon into muffin pan and press down with spoon.

Bake in a preheated oven at 200 degrees cent. For 5 min and then turn on grill for 5 min or untill brown and crunchy on top.

Serve with lettuce and tomato, for that ideal light lunch.

Enjoy

Tip - I remove the pasta rounds with a dessert spoon and make sure it has lifted off the middle.
Gently is the trick.
