My Entry to Qurator's Tasty Tuesday #85 - Swedish Meatballs

This dinner, featuring my own short cut creation for Swedish Meatballs, is a favorite at my house. It's easy to make, clean up is a breeze, and it's economical.

Let's start with making the meatballs. Here are the ingredients:

1 lb of ground beef (or ground turkey for a healthy substitute)
1 egg, well beaten
1/4 cup finely chopped onion
1/4 t Italian seasoning
1/8 t salt
Combine all the ingredients in a bowl until well mixed.

Scoop out by large spoonfuls and roll into balls.

Now for the sauce - here comes the "easy" part. I simply cover the meatballs with a can of condensed Cream of Mushroom soup.

We enjoy baked cabbage wedges with this entree. It's a very low calorie and healthy choice to offset the meatballs and sauce. The cabbage can bake at the same time as the meatballs and by using foil packets- no cleanup!

I slice the cabbage into thick wedges.

Place the cabbage wedges on large squares of aluminum foil. Drizzle with olive oil and sprinkle with Italian seasoning, salt, and pepper.

Fold the foil together around the cabbage and seal all the open sides to make a packet.

Place the meatballs and the cabbage in the oven at 400 degrees F and bake for 30 minutes.

Here are the meatballs after cooking. I take the meatballs out and stir the sauce to combine all the flavors before serving.

And this is how the cabbage looks after baking. Be careful opening the packets, there will be juice and steam contained within.

For the starch portion to complete the meal, I chose Seeds of Change Organic Quinoa & Brown Rice with Garlic. This comes in a packet that you simply microwave for 90 seconds. Of course, there are all kinds of choices for the side dish.

Here is the finished product, plated with a garnishment of Lingonberry jelly, which makes a delightful accompaniment for the Swedish meatballs.
