Sweet Potato Salad & other braai shenanigans...

There has been a LOT of talk about potato salad in our PHC discord server today haha (@abitcoinskeptic) and considering that I actually made some yesterday - I thought it would be the perfect day to share it with everyone. I seldom eat traditional potato as many of you already know, so the potato salad I made was a sweet potato, potato salad. For some reason, many people don't seem to think you can create the same dishes with sweet potato - such as potato salad, potato bake, roast potatoes, mash etc. and that is not at all true!

Over the last couple of years I have made a point of testing out pretty much EVERYTHING with sweet potato and have not had a failed recipe yet. So... whilst potato salad is a really simple dish to prepare, everybody has their own method and I thought that I would share my sweet potato method because many people prefer to eat low carb foods these days and this is a winner...

Yesterday was an absolutely beautiful day here in Cape Town and when the weather is sweet this side of the world, you know what we do... yip, we braai - and braai we did!

Nothing goes better with braaied meat than a potato salad, so when we went off to get the goods for the braai, I grabbed some sweet potato. I was not in the mood to peel and chop the sweet potato myself so was looking for the "ready to go" kind. The grocery shop didn't have any cubed - but only sliced, which really speaking is not what you would use for a potato salad but I like to try new things and to be honest, I did not see why it wouldn't work...

So, pop the potatoes into a pot and boil until soft (but not breaking). This generally takes about 20 minutes of boiling. Once boiled, drain them, allow them to cool and then pop them into the fridge for an hour ow two... just so they don't break apart when you mix them all up later.

Once chilled, remove from the fridge and add all the fun stuff! I added some diced sweet and sour gherkins, diced spring onion, chopped parsley, salt, pepper, a little potato spice, mayonnaise and about a half a tub of fresh cream.

And that's it! Super simple and just as tasty as any traditional potato salad! The cream really contributes to that as I have done it before without the cream and it was nowhere near as nice! Oh, and I topped it with a scattering of micro herbs and some viola flowers from the garden... and yes, they are edible :)

That was not the only side we served with the braai - how boring would that have been haha! I made some baked gem squash which were stuffed with diced veg (cauli, bell pepper, onion, marrow etc.) I added a dollop of butter on top, seasoned them, covered them with foil and baked them in the oven for one hour at 170 degrees Celsius. Once they were finished baking I grated a littl mozzarella cheese on top.

And then I just did a fresh green salad, and we had a roasted garlic & pepper flat bread as well. It was a super duper braai and thankfully the weather stayed gorgeous throughout the entire evening so we ate outside, which is my favourite! Oh yummy! And beautiful view! One question, what do your sweet potatoes taste like (plain)? I ask because your sweet potatoes look different! Our sweet potatoes are dark orange inside and taste very similar to pumpkin!

We have those sweet potatoes here too. Those are much sweeter than the white inner variety, but absolutely no reason why you cannot make a potato salad with those. in fact, I think I will try that - the visual end result could be quite fun!

Hot balmy weather again, time to eat outdoors (fight off mosquitoes), enjoy the evenings again.

Never made sweet potato salad, that looks tantalizing @jaynie enjoy the weekend.

Been pretty warm this side too @joanstewart! It is 10.47pm as I write this and we still have all the doors open lol. As for the salad, yes I actually wonder why I didn't start experimenting with sweet potato sooner. It really is so versatile and a LOT healthier than traditional potato.

Ah the viola are a gorgeous touch. I am sprinkling calendula on every meal I make at the moment!

Oh they are too beautiful aren't they! I was actually AMAZED that I mananged to convince my 10yr old son to eat them too! haha! Love calendula! There are so many amazing plants that can be used creatively with presentation and most of them host a bucket load of nutritional values as well!

I know right!! So under valued. I've been drying tons of it before the summer wilt - calendula is sooo beneficial!!! Nasturiums are pretty too.
