On this occasion, I bring you a very simple but well-loaded recipe for vegetables and natural products full of nutrients. Let's see what it's all about.

These carrot and zucchini pancakes can be brought to the table ready in no more than 30 minutes. These pancakes are crunchy on the outside, but tender and soft on the inside. At our choice, we can serve them for lunch, lunch, as a snack or even pack them to take to work or school.

Ingredients for 4 people

3 peeled carrots, 1 zucchini, 1/2 white onion, 2 tablespoons parsley, 2 eggs, 1/3 cup milk, 1 cup flour, 1 teaspoon baking powder, olive oil as needed, salt and pepper.
How to make carrot and zucchini pancakes
We begin the preparation of our pancakes by grating the carrots and zucchini with the help of a thin grater and finely chopping the white onion and parsley. Mix the vegetables with a little salt and pepper and set aside.

In a bowl, beat the eggs and add the milk, flour, baking powder, and a little salt. Mix until you get a homogeneous paste and then add the vegetable mixture. If we notice that it has become very thick, we can lighten it with a little more milk.

Next, heat a frying pan over medium heat and add a spoonful of olive oil, making sure that a light layer covers the entire surface. We will place a portion of the vegetable dough of approximately 1/3 cup, although we can rely on a spoon for ice cream or another large kitchen, always using the same so that we are of similar size. Flatten with the back of a spoon to shape, making sure they are not too thick to ensure cooking.

Wait for the pancake to brown at the bottom, then turn it over and let it cook for another two minutes. We will repeat these last steps until finishing with all the dough.

Carrot and zucchini pancakes are accompanied by a spoonful of cream or Greek yogurt, a little more chopped parsley and a little lemon juice. If we want to make it gluten-free, we can without any inconvenience, replace the flour by the same amount of perfectly ground oats.
