El Roscón de Reyes (traditional dish from Spain)

In Spain on the 6th of January, we celebrate Los Reyes Magos, Melchor, Gaspar, and Baltasar; the story is about three kings who bring baby Jesus presents the 6th of January. Today we celebrate it on the 5th of January with the Cabalgata de Reyes: the three kings come with carriages and accompanied by the king's messengers and dancers, whilst all the children watch and give their letters to the messengers. Then on the 6th of January children wake up to presents and everyone eats Roscón de Reyes!

So yesterday my mom and I started doing El Roscón with the Thermomix:

First, we diluted the yeast in warm milk, and we mixed it 37ºC After we added the flour and then we took it out of the Thermomix and kneaded and rolled the dough into a ball, and covered it up for 1.5h.

While we were waiting for the dough, we pulverized the sugar and added the skin of an orange and the skin of ½ lemon -without the white part and blended everything together, then set that aside.

For the flavored milk: We infused the milk, added: orange skin that we had left, half lemon skin, and a cinnamon stick. Then we let it temper and mixed everything together: the dough, the pulverized sugar with the orange and lemon skins, the flavored milk, and 2 eggs.

Then we removed the dough. Sprinkled some flour on the counter, and formed a ball, and left it to rest for 15 minutes. After the 15 minutes, we made a hole in the middle, and we hid a little figurine of a king inside. Next thing was to paint the Róscon with egg and let it rest for 2 hours.

After 2 hours, we put some crushed almonds, and again we painted the Roscón with egg. Then we put it in the oven at 200ºC for 16 min.

I hope you try this at home, you can also put candy instead of almonds.
