How to make grapefruit gruel with coconut milk

Grapefruit gruel with coconut milk is the most popular form of desserts in Vietnam. This delicious dessert is ideal for hot summer. The way to cook these desserts is very easy but it takes time so long, and it is almost the same recipe. The essence may lie in one special ingredient: coconut milk and tapioca flour. In yesterday's post, I shared the recipe for making "pandan pearls with corn and tapioca gruel" , in that post I also used coconut milk and tapioca flour. In today's post i use pomelo pulp (white part between green shell and grapefruit section), it sound strange that we eat pomelo pulp?😨 Oh no it's better than you think, it is a chewy, crunchy, slightly sweet. You will wonder how I make pomelo pulp? Is grapefruit pulp bitter? Why you eat that?? I have made pomelo pulp jam before with sugar, pomelo pulp has many uses: used to make jam, used to cook gruel, used to extract grapefruit essential oil, .🤗. It can be served cool with ice or warm.

Ingredient:

  • Grapefruit pulp
  • Grapefruit flavor
  • Green beans
  • Coconut
  • Street
  • Tapioca
    1. How to prepare pomelo pulp?
    😍😘
    Pare off the green peel of the pomelo, only take the white part. Slide the white part into small squars and mix them well with a little salt.

Soak in salt water for about 2 hour to remove the bitter taste. After that, wash many times in water to reduce the salty from pomelo pulm. You should taste pomelo meat in this step, If you find it doesn't taste bitter, you have succeeded in the dish. Press all water out of white pomelo part. Soak them in sugar for about 6 hours. Add tapioca starch to the white pomelo part and mix well. Boil water and pour all sliced pomelo meat into pot. Cooked similar to pearls, cook until they are floated on water.

Remove and add to ice. The ice water will make the white pulp to be chewier as well as crunchier.
2. How to cook tapioca + green beans (you also can use other beans for the soup as your own favourites like red beans or black beans)

Soak the mung beans for at least 3 hours, preferably overnight. Then rinse with water. Steam the mung bean until it soft and cooked. The mung beans should be soft but still in their shape. Dissolve the tapioca starch with water cold, add in pot sugar, stir well, add to stove, both heat and stir to avoid cradle and clotted..You can add some pandan leaves to enhance the flavors. Add the cooked green beans to the pot and stir, cook for about 5 minutes and then turn off the heat, you should cook under low heat until they boil or cook until sauce thickens.

3. How to cook coconut milk

Pour coconut milk into a pot, add sugar and tapioca, turn on the cooker, mix well until the coconut milk boils, turn off the cooker and let it cool.

Take it out, let it cool, and add grapefruit water to stir well, ladle them into the bowl.🤤 Add coconut milk on top, serve with dried coconut or fresh dill. Hope the taste is good for you!
