We eat a lot of varieties of mushrooms in our home. We like chestnut, white field and button mushrooms, shiitake, portobello, porcini and oyster mushrooms.

We have foraged for field mushrooms before and snacked on raw ones but you have to be careful not to eat poisonous fungi as it could cause a stomach upset, vomiting and even death.

Portobello mushrooms are delicious when stuffed with blue cheese, leeks, garlic and bread crumbs and grilled. We eat fried mushrooms with meze and as a topping with noodle soup. Mushroom soup using dried porcini and mushroom risotto are favourite dishes.

To clean mushrooms, the soil should be brushed off and if necessary, rinse lightly. If mushrooms are washed, they tend to soak up water.

Mushrooms are packed with fibre, selenium (an antioxidant), B vitamins, copper, potassium and protein. White button mushrooms are a good source of vitamin D.

Mushrooms are reputed to protect against cancer, are anti-inflammatory, protect heart health, aid digestion and weight loss.
