Nutritious onions

We grow onions in our vegetable patch, though some are harvested early and used as spring onions. They are easy to tend to and hardy vegetables.

We use onion in Italian tomato sauce and Spanish omelettes, fried onion with grills, raw red onion in salads and spring onion in Asian noodle dishes. We always have a supply in our fridge too as it is so versatile and adds flavour to savoury dishes.

Chopping onions can make you cry unless you chop off both ends first before you peel them.

Onions were used for medicinal purposes in ancient times. They are packed with vitamins, minerals and fibre. They are an excellent source of vitamin C , rich in B vitamins and a good source of potassium.

Onions contain antioxidants and are anti-inflammatory. They are reputed to reduce the risk of heart disease, diabetes and cancer. They reduce blood sugar levels, improve bone mineral density, have anti-bacterial properties and improve digestive health.

My children refuse to eat onions so we whizz them up with other vegetables and tomatoes before serving them for flavour and health.
