Nutritious delicious garlic 🌱

We add garlic to most of our savoury dishes. It complements Mediterranean and Asian cuisine and is highly nutritious. Roasted or fried garlic is delicious. Fresh garlic is rather pungent and not for the faint hearted 😆.

Garlic is a member of the Allium (onion) family. One or two cloves per person is usually sufficient to flavour food. We use a lot in our roast dinners and also in basil pesto, in which it is effectively a raw ingredient. Whilst we often use fresh garlic, we do have garlic paste, garlic powder and garlic oil in our kitchen.

Hippocrates, known as the father of Western medicine is known to have prescribed garlic for medicinal purposes. The sulphur compounds it contains provide potent health benefits. It provides a rich source of vitamins B6, C, manganese and fibre. It also contains calcium, iron, copper, potassium, phosphorus and vitamin B1.

Garlic is reputed to boost the immune system, reduce blood pressure and cholesterol levels. The antioxidants can reduce aging and cell damage whilst reducing the risk of dementia.
