Healthy bell peppers, capsicums 🍕

We eat bell peppers both cooked and raw and prefer the red variety which are sweeter than the green ones. We add them to curries, salads, stir fries and as a pizza topping. One of my favourite seasonings is paprika, which is dried bell pepper.

Bell peppers are rich in vitamin C and antioxidants. They also contains vitamin B6 (important for the formation of red blood cells), vitamin K1 (to prevent blood clotting and for bone health), vitamins A and B9 (folate), potassium (improves heart health) and vitamin E (which supports healthy nerve and muscle function).

The vegetable is also reputed to support eye health, reduce the risk of anaemia and cancer and increase metabolism which can aid weight loss.
