Corn on the Cob / Sweetcorn / Maize 🌽

We visited a farm today where they grow maize / corn. In fact this corn will be used to power windfarms which generate electricity but we also love to eat corn on the cob.
We usually boil fresh corn on the cob and add a dollop of butter. We serve as a side vegetable to our meals. It is also classed as a wholegrain. You can use a knife to scrape the corn off the cob if you prefer. Sweetcorn goes well with tuna, chicken, in vegetable soups and with pasta dishes. It mixes well with petit pois (baby peas) and is a favourite with our children.
We buy frozen sweetcorn to add to the steamer and to noodle dishes. We also love popcorn. It is both nutritious and delicious.
Corn is high in fibre, antioxidants, vitamins B1 (thiamine) and B9 (folate), vitamin C, magnesium and potassium. It also contains phosphorus, manganese, copper and zinc.
Corn is reputed to promote eye health and reduce the risk of diverticular disease (inflammation of the digestive tract).

A good question ... for google. I heard this from the farm worker who gave us a tour in his tractor today. In previous years they used the corn to feed livestock 🚜 ðŸ’
