Flat Out of Flat Breads: Plan B

Last night's meatfree Monday supper was, if you lose the delicious tzatziki, totally plant-based.

It was not, however, what I had planned. It was supposed to have been flatbreads. There was just one in the deep freeze (The Husband, the growing boy, needs two), and I had neither the energy nor all the ingredients to make a batch.

A fridge consulation revealed sweet potatoes, butternut, carrots, courgettes and sundry capsicums.

What emerged:



A bed of roasted butternut and sweet potato, tossed in home made harissa and loaded with a vegetable stir fry and topped with slices of brinjal and fresh coriander.



Piled on to a platter and for those who wished, the tzatziki and extra chilli (jam) on the side.



The eating was delicious and, I suspect, will be as good cold, as it was, hot. There was as much left over as we ate, so this vegetable miscellany will feature in another meal this week.

Yay! Thank you @fionasfavourites. I'm trying to slowly reconnect with everyone. And identify my make over self ;) The Klein Karoo is beautiful. Especially now that the drought is over. The succulents are going to start blooming soon
