Instant Pot Butternut Squash Soup


This instant pot butternut squash soup is creamy, delicious and packed with Fall flavors! Apples, butternut squash, cheddar cheese, and stock mingle together to create the ultimate cozy soup recipe that takes less than 30 minutes to make.


There’s something about this season that makes us all crave something comforting and there’s nothing quite as comforting as a big, steamy bowl of cheesy goodness. And even better if it’s quick right? I mean, we are all a bit busy with holidays and parties and get-togethers that happen during this season.

Well, this instant pot butternut squash soup hits the spot! It’s thick and creamy (like all good soups should be in my humble opinion), it’s so flavorful and just a bit spicy and all the ingredients contribute to create something A-MA-ZING:

  • The butternut squash gives it an earthy, roasted, flavor that’s just mouthwatering
  • The apples pack all the sweetness we may crave (and also help to balance the richness of the soup)
  • And finally, the cheddar cheese. I think this one is pretty self-explanatory.

How to make butternut squash soup in the Instant Pot

The secret thing in almost all my creamy soup recipes is the Instant Pot. It’s the best way to get that slow-cooked flavors + the super creamy consistency in almost no time. This butternut squash soup actually takes around 20 minutes from start to finish, can you believe that? All thanks to the Instant Pot. 

However, making a delicious soup in the Instant Pot has a bit of a trick. You need to sautee some of the ingredients before. That’s what caramelizes things like onions and apples. I just go ahead and sautee in the Instant Pot too, so there aren’t any more pots and pans involved.

Can you freeze butternut squash soup?


I honestly don’t advise freezing any creamy soups or soups that have milk added to them. Their consistency changes a lot once thawed and it’s not as delicious and freshly made. Plus, this is so quick to make you wouldn't save a lot of time making it in advance. 

What kind of apples can I use in this butternut squash soup?


There are a lot of different ways to use apples. Some are better for fresh eating, like the Yellow Delicious, Honeycrisp, or Red Delicious. However, for cooking in this soup, you want an apple that has a firm flesh, with more tart than sweet to it. Apples that will blend well with butternut squash:

  • Pink Lady
  • McIntosh
  • Jonathon
  • Empire
  • Cortland

Do I have to use the flour in this recipe?

NO. If you are gluten free, you can certainly leave the flour out. The soup will not be as thick, but will still taste great. Some other gluten free thickeners you can try would be arrowroot powder, cornstarch or xanthan gum

What to serve with this butternut squash soup:

Ingredients: 

  • 4 Tablespoons olive oil
  • 1 Yellow onion, chopped
  • 1 Apple, chopped
  • 5 Tablespoons flour
  • 3 Cups vegetable broth
  • 4 Cups butternut squash, cubed
  • Salt and pepper to taste
  • 2 Cups milk
  • 1 Cup cheddar cheese, shredded
  • 2 Tbsp butter
  • Turkey bacon and brie as a topping (optional)

Instructions:

  1. Select the sautee option in the Instant Pot. Once it reaches “Hot” add olive oil, chopped onion and chopped apple. Cook until fragrant, around 5 minutes. Add flour and cook for 2 more minutes or until golden.
  2. Add the vegetable broth, butternut squash and salt and pepper. Close the lid and valve and set on high pressure for 12 minutes.
  3. Manually release steam and open the lid.
  4. Incorporate the butter, milk and cheese and stir until everything is well incorporated and creamy. 
  5. Serve hot and enjoy!
