You cant tell how old the river is but you can date the mountains around looking at the radioisotope decay of the rocks. In the case of the Finke river there are meanderings which predate the uplift of the mountains (you can tell if they were formed by the run off from the existing mountains). So we know its older than the mountains around it; but not sure how much older.
