Smoking is different than roasting. Roasts are usually cooked around 225°C, whereas this is down around 110°C. The charcoal blocks smoulder, which creates a lot of smoke and not a lot of heat. By trapping the smoke in an enclosed space, it adds flavor to the meat!
I think where I live, we don't differentiate between those two? Not that I know for sure...
You know how the word Grandfather can mean your parent's father from your mother side or your father's side? Makes me realize again how language can't express everything...

I have extra charcoal at the end, which will raise the temp and cook it a bit more thoroughly. By that point, we should approach 200°C.
