Palm oil is a kind of oil produced from palm kernels and it is a handy substitute for vegetable oil either the one produced with soybeans, canola, coconut, corn, olive, peanut, soybean, and sunflower.

It is a secret ingredient of most soups in Nigeria and this can be testified to by people that know how to detect good food.

In Nigeria, most of our soups are made with palm oil especially the local soups such as banga, ognono, egusi, efo riro, oha soup and so on. Only a few cook stew with palm oil and it is mostly bleached, that is, the palm oil is heated until it changes color to a lighter shade. Vegetable oils are mostly used to make stew, fry eggs, fry snacks and so on which palm oil cannot be used for.

Palm oil gives foods a special unique taste that makes you lick your finger rapturously. It has existed long before vegetable oil is introduced to us. Our grandparents were not using vegetable oil during their time.

They make use of palm oil by processing and extracting the oil by pounding the palm kernels in a mortal and washing it off in a warm water. After a while they scrap the oil from the surface of the water. At this point the oil will be above the water in the large bowl. These days there are mechanized methods of processing palm oils.
