Comfort Food Cooking: Osso Buco

There are days that I crave the food that provides me the nostalgia that I need to make me "feel good". Osso Buco is one of those foods.

Osso Buco is comfort food to me. Growing up in our home and whenever my Mom prepared this dish, she would call my brothers and I and taught us how to make it. Then she made sure that we knew how to cook it by requiring us to take turns in cooking Osso Buco for the family.

During these days of social distancing, you can be sure that Osso Buco was a dish that I prepared for myself. I want to share this recipe with you today.

Simple, Easy & Delicious Osso Buco

Ingredients

  • 2 pounds Beef Shank
  • 3 tablespoons Olive Oil
  • 1 large onion, chopped
  • 4 ribs celery, chopped
  • 2 carrots, sliced
  • 4 segments garlic, crushed
  • salt, pepper
  • 3 tablespoons tomato paste
  • 1 cup red or white wine
  • 2 cups water or broth

  • Directions

    1. season both sides of the meat with male amounts of salt and pepper.

    2. In a heavy skillet, heat the olive oil to hot. Brown the meat n both sides. Remove the meat from the pan and set the meat aside in a holding plate.

    3. In the same pot, add the onions, celery, and carrots. Stir and cover the pot to cook vegetables about 3 minutes.

    4. Add tomato paste and stir to mix well with vegetables. Continue cooking the vegetables for another 3 minutes.

    5. Add the wine, stir the mixture and continue cooking for another minute to for all the flavors to develop.

    6. Return meat to pan. Add water or broth to the pot enough to cover the meat.

    7. Put the lid back on the pot. Bring to a boil, and reduce heat to simmer. Cover, and cook for 1-1/2 to 2 1/2 hours.

    8. Serve hot with risotto, or mashed potatoes, or steamed rice.


    My friends love this dish and they always ask me what the secret is. Well, the secret is braising the beef shanks in white wine, Mirepoix, and tomato paste that turns the meat perfectly falling apart tender and so full of flavor.

Looks delicious, I have been cooking professionally for over 30 years and this is a really good comfort food dish. I have not had it in a long time but after seeing this I may have to make some. I also like to put it with either rice or mashed potatoes as an accompaniment .

You don’t use veal???? It’s traditionally done with veal bestie. I’m sure it was fantastic. Enjoy🤗 i serve mine over risotto

Yeah, I know what you are saying. To tell you frankly, I never used veal for a dish that you slow cook forever an hour. I use veal for dishes that require quick cooking, lol! Tastes very good, even without the combo thyme-basil spice added to most roasted beef dishes. This is no muss-no fuss, simple and inexpensive cooking, yet very tasty and delicious! Try it, bestie!. I still have to master risotto cooking!

... and please let me know how it turns out for you. It is Keto... perhaps just use water (or broth) and thyme and basil spice, instead of wine.

I think most of our stacker-friends are great cooks! I know that @silverd510 is an excellent cook, and so does @fat-elvis! Another one who is a professional chef is chefcaponejr, and he has been busy stacking like crazy lately!
