Rock and Roll Cake

On August 25 was my oldest son wedding aniversary, and we decided to celebrate it with burges and cake. They are having 13 years of marriage called lace aniversary. We can't go out to celebrate because of quarantine, but we have everything at home to make something special.

I named this cake Roquera in spanish and rock and roll cake in english because it is special for young people. Though at home, the oldest one enjoy dancing rock and roll.

The preparation consist in three steps.

Ingredients:

For the cake:

  • 500 grams of self-raising flour
  • 200 grams of sugar
  • 5 eggs
  • 250 grams of butter
  • 1 cup of milk
  • lemon grind

Preparation :

  • in the mixer bowl place the butter and the sugar and mix well
  • add the lemon rind and mix
  • add the eggs one at a time and keep mixing
  • add the flour and the milk
  • place the mixture in athe tin to use and bake for 40 minutes

Ingredients for the sweet bechamel:

  • 1 liter of milk
  • 1/4 cup of sugar
  • 1 tablespoon of vanilla esence
  • 1 spoon of unflavored gelatin
  • 4 spoons of flour
  • 1 package of peanut flavour cookies crushed

Preparation of bechamel:

  • add in a pan the milk, sugar, esence and gelatine
  • once boiling add the flour
  • don't stop whisking the milk to avoid lumps
  • when ready put it in a basin and cool
  • once cool add the crushed cookies

  • divide the cake in two parts and fill with the above mixture

To finish the cake you can decorate it with an italian meringe or a chocolate ganash, and finish with crashed cookies or candies.
