Lockdown Cooking: Canned Tuna Upgrade

Has the "curve" flattened already?

It's been a while since I last checked the UAE stats (or PH, or worldwide stats) and I am surprised to find out that it has touched the 16k mark already!1 Hundreds are still being confirmed every day.

That being said, there is absolutely no reason to be complacent at this point. This is far from over.

Ever since the Covid-19 pandemic happened, I have dreaded going to the grocery. It's just too stressful. Each time that I do, I add a few more canned goods to stock at home "just in case".

Cooking has been a challenge for me recently, and I know for you too. There are some households that are lucky to be recipients of donations, most of them canned goods. Some have already kept a big stash of canned goods, and now the challenge is to find ways to be creative in the kitchen to satisfy our loved ones.

I found a canned tuna in my pantry cabinet and thought of a new way to present it to hubby @kennyroy and kids. I have done chicken fajitas a couple of times already in the past, and because @kennyroy does not eat chicken, he has not yet tried it. I'm not sure how the recipe will go with tuna, but I am in the mood for another kitchen experiment.

Ingredients:

  • 1 canned tuna
  • 2 tomatoes, sliced
  • 1 onion, julienned
  • capsicum, sliced
  • 2 tbps tomato sauce
  • 1 tbsp extra virgin olive oil
  • shredded cheddar cheese
  • 1 tsp paprika
  • 1/2 tsp cumin powder
  • flour tortilla wraps

Procedure:

Again, you do not need to be a kitchen expert to pull this through.

Simply saute the onion and tomatoes on a pan, then add the canned tuna once the tomato has slightly wilted. Add the tomato sauce and seasoning; you can adjust measurements according to taste.

Lay your flour tortilla and add your tuna. Add a generous amount of cheddar cheese then fold into a wrap.

The verdict

It's a hit! Hubby loved it, even kuya had a share.

It is fast and easy to prepare too. Your fajitas are ready within 20 minutes.

The tuna I got was too spicy, but the cheese balanced the over-all taste. Besides, who does not love spicy?
