Pork Dinakdakan

Pork Dinakdakan is an Ilocano dish from the Norther part of the Philippines. Ilocos is one of the topmost municipality in the big chunk of island in the upper part of the Philippine called Luzon. Dinakdakan is a recipe similar to sisig but the pork cuts are bigger. They use the face, the skin, the liver, the ears of the pork.

What makes the Dinakdakan different is, it uses the pig's brain to make the dish creamier. I think you can tell that in the picture. Those white stuff are the brain. I love this dish but it is rarely cooked in the nearby restaurants since it is not a local dish. At home, we are not familiar cooking this because we hail from the mid part of the Philippines.
