Crispy Potato Patties (Aloo Tikki)

Aloo tikki (Potato Patty) is a famous Indian street food made with boiled potatoes, chana dal and aromatic spices. These are fried in desi ghee and are extremely crisp in texture. It is one of the most popular snack one can find in an Indian wedding and is loved by people of all age groups.

Aloo tikki in itself is very tasty but people like making a chaat snack using it. Aloo tikki chaat is prepared by crushing the aloo tikki and adding mint chutney, tamarind chutney, curd, sliced onion and coriander leaves. Some people also add boiled chickpeas curry to the chaat. It varies from region to region but the crispy tikki is what you can find almost every where in the country, no matter where you go.

Aloo tikki has been my favourite snack since child hood. I don’t like it with all the chutneys and curd. I prefer relishing only the aloo tikki with some slat sprinkled from top. It tastes amazing. Bets part, can be easily made at home.

Ingredients

5.Roasted cumin Powder½ TBSP

9.Red Chilli Powder1 TBSP

Method

Step 1: Boil the potatoes and grate them using a fine grater.
Step 2: Boil the chana dal to just cooked status.
Step 3: Rinse off all the water from the chana dal and convert it into a bowl. Add 1 grated potato, chopped green chillis, fennel seeds powder, roasted cumin powder, chopped ginger, salt, dried mango powder and red chilli powder. Make sure this mixture is spicy enough because this is the filling and the outer coating of potatoes is considerably bland.
Step 4: Take the grated potatoes in a bowl. Add salt, red chilli powder and mix well.
Step 5: Apply some oil on your palms and divide the prepared potato mixture into equal portions and shape them to small balls.
Step 6: Now take one ball at a time and flatten these balls between your palms slightly and make an impression with your thumb, forming a well-like shape.
Step 7: Fill in the prepared chana dal filling and seal the edges. Rollback and flatten with palms.
Step 8: Heat oil and ghee in a non-stick pan, Shallow fry the prepared aloo tikkis till golden brown on both sides while pressing the tikki with the back of a spoon in intervals to ensure it becomes crisp.
Step 9: Serve hot with mint chutney, tamarind chutney and curd.
