Maple Frosted Pumpkin Spice Cookies

One of my new favorite recipes! Ever since I started making my own creations I've run into some interesting combinations. This one simply is packed with flavor and the spice will burst across your taste buds!

Even though it's not fall pumpkin spice is one of my all time favorites. Sometimes I just can't wait and end up cooking a batch of these. These cookies are soft and packed with just the right amount of pumpkin spice punch.

This recipe could be changed into any of the following by adding in a few ingredients such as pumpkin chocolate chip cookies, oatmeal pumpkin cookies, pumpkin sugar cookies and of course everyone's favorite pumpkin snickerdoodles.

  • Prep Time: 10 minutes
  • Cooking Time: 15 minutes
  • Ready in: 25 minutes

Ingredients
Cookies

  • 1/2 cup butter softened
  • 1/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon all spice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground clovers
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 12 teaspoon salt
  • 1 1/2 cups all-purpose flour

Maple Frosting

  • 1/2 cup butter softended
  • 1/3 cup maple syrup
  • 1/2 teaspoon vanilla
  • 1 1/2 cups powdered sugar
  • 2 teaspoons milk

Instructions

  • Preheat oven to 350F and like a cookie sheet with parchment paper.
  • In bowl cream the butter and sugars together until smooth. Add egg, vanilla and combine. Add pumpkin puree and combine
  • In a new bowl whisk together all dry ingredients and spices.
  • Combine wet and dry ingredients together and combine.
  • Scoop 2 tablespoon balls of cookie dough onto cookie sheet. Bake for 14-15 minutes and place on cooling rack.
  • prepare frosting by combining all ingredients in bowl. Mix by hand.
    *If frosting is too runny add 1 tablespoon of powdered sugar at a time.
    *If frosting is too thick add 1 teaspoon of milk at a time.
  • Frost cooled cookies!
