I Loveeee To Cook & to Eat So...

And so I though well that is a good contest to join in since I have been doing all sort of stuff on the kitchen this quarantine anyway. (haven’t you heard I’m all into contest now all my pasts posts are for challenges and contest lol they do help me come up with stuff to posts so...)

Before I meet my bf I didn’t even cooked to save my life, now I do cakes and lasagna and all sort of stuff, is not just cause I do it but I have to say what I cook tastes delicious even tho it may not look like it LMAO I suck big time at making my food look pretty. And this quarantine got me on full baker mode I have made so many cookies and cakes and even ICE CREAM!!! From scratch that is amazing! I follow a lot of food accounts on Instagram and I love this girl @shurthycooks she is from Venezuela too so, she uses stuff cheap and easy to find materials on her recipes.

Money Issues to Buy Food?? Well…

Yes, I live in Venezuela and we have economic issues and if we add to that the fact that the quarantine makes my job on sells very hard, BUT!!! It has not stopped me from trying to be able to give my kid good and yummy stuff to eat that is why I’m cooking and baking so much! You see many may think we need a lot of money to be able to have yummy stuff but in reality, nope you just need good recipes to follow lmao.

I even have issues with our supply of domestic gas for our kitchen (yes we have the biggest reservoirs of natural gas yet is so hard and expensive to get gas deliver to our house is not fun) yet this has not stopped me either I just find new ways to cook stuff.

Here are some of the things I have made this past few weeks in a creative and cheap way!

Microwave Cookies!!

So, I come up with the recipe for chocolate chips cookies from @SurthyCooks on Instagram really simple and cheap ingredients (the chocolate is not as cheap but hey you can make the effort to buy at least some).

Ingredients

3 cups of Self Raising Flour
3 Cups of Sugar
2 Eggs
1 Cup of Butter
Chocolate chips as much as you want. (I WANT A LOT!!!)

You are supposed to make the dough mixing all the ingredients and adding the chocolate at the end, let it rest for at least 15 min in the freezer (I just let it be for 30 min it gets easier to handle later) and then put in the oven for 20 min.

I do all the steps except the put in the oven one, since I don’t have too much gas to spare on making cookies, but I did want my kid to have some awesome chocolate chips cookies to eat I looked for options and well HELLO MICROWAVEEEEEE lol. I’m going to be honest first time I tried this I didn’t had the chocolate to add it so… I was just making simple plain old butter cookies .

They were soooooo yummy!!! So crunchy yet chewy inside I needed to try out the chocolate chip ones so…

I added a cup of coffee and a tbsp of vanilla extract to the mix


LOOOKKKK HOW GOOD!!! just 2 min a bach in the microwave and just keep adding 20 sec to that if you want it to cook more.

I loved making those cookies so much I am obsess with them! and yes my kid loved them too!

I made a lot of other cheap and easy yummy stuff like this

Rice Pudding / Rice With Milk // Arroz Con leche

Is a recipe I also took from Instagram from an account call @OhLalaMacarons

This only has 3 ingredients ok 4 if you count Water:

  • 4 cups of White Rice
  • 5 Cups of water
  • 1 Lt of Milk
  • 1 or 2 Cups of Sugar (if you want it sweeter the more sugar the better)

You only have to put the water to boil and ince is boiling you add the rice and stir it until you see the water has evaporated a little add the sugar, let it cook a little bit more and once the water has evaporated enough the rice is softer, (don’t let the water dry completely) in this part you add the 1lt of milk and keep stirring it don’t let it stick to the pan, you will notice the rice pudding is ready once the rice is even softer and the milk has evaporated enough but not fully, you can let it evaporate much more if you want it more dry but I suggest let it with enough milk. Let it cool and put in the freezer for 30min to eat.

You'll know is ready once is creamy and sweet, is better to eat it once it has cool a little in the freezer.


I also made some

Mocca Ice Cream

It needed only 4 ingredients

  • 3 Bananas (we call them cambures)
  • 1/3 cup of Milk
  • ½ cup of powder cacao
  • 1/3 Strong just made Coffee (The original recipe said to use 2 tbsp of instant coffee but since that is way to expensive I used this instead.)

You let the bananas in the freezer for at least 4 hours or until they are frozen, then you take them out and put all the ingredients in a blender let it mix well the texture is really creamy like a melted ice cream, you put the mix in a recipient and off to the freezer for at least 2 hours and boom! MOCCA ICE CREAM.


I added the chocolate cookies for decoration and cause well we love chocolate lol

The best part is this ice cream recipe is enough to serve at least 9 small cups so we had ice cream to eat for days!

Now I think is enough recipes for one post or I won’t have anything else to post tomorrow lol, I made 3 leches (3 milks) ice cream and cake too but that deserves its very own posts because OMG is so yummy!!!

I really think you don’t need a lot of money to buy food to be able to make yummy stuff I made all these recipes with so little and yet they end up soooooooo good!
