the grilled meat 'Suya', spicy made from skewer meat

As part of exploring and my adventure in the northern part of the country, i came across 'Suya' or 'tsire' as fondly called in nigeria, its a grilled meat made from skewered meat, cow, ram or shrimp. Originated from the northern part of the country. Suya is considered as a road or street snacks by many, because it is mostly sold by the road sides, in bars or hostels too, loved by many. It comes in variaties, not only the meat but the instestines, the kidney, liver and tripe used for suya.

  • It might have been originated from the north but it has been accepted throughout the country, with each part having their own special preparations.

Suya is mostly served at night,thou there has been some debates recently as to why it should only be prepared at nights and not during the day. Suya is popular in west africa generally and is served with dried pepper, cucumber, onion and lettuce.

The spices added make the taste so unique and makes one craves for more.


Its preparations is a quite difficult and time consuming one, maybe because its usually roasted.
After getting the meat, it is expected to thoroughly wash the meat several times, then cut into pieces, spiced with necessary ingredients. mostly the dried pepper that has been blended with seasonings and are slightly dipped in a oil before being placed on a burner for it to roast, this is where, the time consuming comes in because it is harmful to eat an undone or raw meat, So it should be left to be properly roasted and done before serving.
And believe me for those who have tasted this before can testify how yummy and spice suya is. And for those that are yet to eat this, should try and do so,
