"Tang Cu Liji" - sweet and sour pork strips chinese style / tiras de cerdo agridulce estilo chino

Saludos querida comunidad de GEMS, siguiendo el hilo de recetas con ese toque asiático que tanto me encanta, les traigo en esta oportunidad una receta de “Tiras de Cerdo Agridulce” o “Tang Cu Liji”, este platillo forma parte de la cocina china y aunque su preparación es bastante sencilla no deja de ser un plato exquisito donde se aprovecha al máximo el sabor del cerdo que a su vez viene acompañado por una textura crujiente y una salsa agridulce deliciosa.

Greetings dear community of GEMS, following the thread of recipes with that Asian touch that I love so much, I bring you in this opportunity a recipe for "Sweet and Sour Pork Strips" or "Tang Cu Liji", this dish is part of the Chinese cuisine and although its preparation is quite simple but still is an exquisite dish where it takes full advantage of the flavor of pork which in turn is accompanied by a crunchy texture and a delicious sweet and sour sauce.

Este platillo es uno de mis favoritos por el poco tiempo que toma prepararlo y los pocos ingredientes que se utilizan. Para comenzar necesitaremos dos grupos de ingredientes, uno para preparar el cerdo en tiras y el segundo para preparar nuestra salsa agridulce.

This dish is one of my favorites because of the short time it takes to prepare it and the few ingredients used. To start we will need two groups of ingredients, one to prepare the pork in strips and the second to prepare our sweet and sour sauce.

Para las tiras de cerdo necesitaremos:

For the pork strips we'll need:

  • Lomo de Cerdo, aproximadamente 100 gramos por persona.
  • 1 cucharada de Salsa de Soya Ligera
  • 1 cucharada de Vinagre de Vino Blanco o Vinagre de Manzana.
  • 1 Huevo.
  • 50 gramos de Harina Todo Uso.
  • 50 gramos de Maizena.
  • Pimienta Negra y una cucharadita de sal.
  • Aceite Vegetal para freir y semillas de sesamo para la decoración.
  • Pork loin, approximately 100 grams per person.
  • 1 tablespoon of Light Soy Sauce
  • 1 tablespoon of White Wine Vinegar or Apple Vinegar.
  • 1 Egg.
  • 50 grams of All-Purpose Flour.
  • 50 grams of Cornstarch.
  • Black Pepper and a teaspoon of salt.
  • Vegetable oil for frying and sesame seeds for decoration.

PASOS:

1-Comenzaremos picando nuestra carne de cerdo en tiras, es importante que no sean tan gruesas para evitar que la carne quede cruda.

1-We will start by mincing our pork in strips, it is important that they are not so thick to prevent the meat from becoming raw.

2-Seguidamente vamos a marinar el cerdo, para ello colocamos la carne en un bol y agregamos la salsa de soya, el vinagre, la pimienta, la sal y el huevo y mezclamos muy bien.

2-Marinate the pork. Place the meat in a bowl and add the soy sauce, vinegar, pepper, salt, and egg and mix well.

3-Tapamos con un papel film y dejamos reposar por 30 minutos en la nevera.

3-Cover with a film and let it rest for 30 minutes in the refrigerator.

“Para freir nuestro cerdo vamos a realizar la doble fritura que utilice en mi receta del Karaage para que nos quede super crujiente”.

"To fry our pork we're going to do the double frying I used in my Karaage recipe to make it super crispy."


4-Pasados los minutos vamos a realizar la primera fritura, para ello empanizamos el cerdo en la mezcla de maizena y harina de trigo, freímos en aceite caliente por unos 4 minutos.

4-Once the minutes have passed we will make the first frying, for this we bread the pork in the cornstarch and wheat flour mixture, we fry in hot oil for about 4 minutes.

5-Sacamos del aceite y dejamos reposar 5 minutos, enseguida subimos la temperatura y freímos hasta que las tiras de cerdo estén doradas y crujientes, sacamos del aceite y reservamos.

5- Remove from oil and leave to rest for 5 minutes, then raise the temperature and fry until the pork strips are golden and crispy, remove from oil and set aside.

Primera fritura / Segunda fritura


Llego el momento de realizar nuestra Salsa Agridulce, para ello necesitaremos:

The time has come to make our Sweet and Sour Sauce, for which we will need:

  • Agua.
  • 4 cucharadas de salsa de tomate o Ketchup.
  • 1 cucharada de vinagre.
  • 1 cucharada de azucar.
  • 1 cucharadita de maizena.
  • 1 cucharada de salsa de soya ligera.
  • 1 diente de ajo.
  • Water.
  • 4 tablespoons of tomato sauce or ketchup.
  • 1 tablespoon of vinegar.
  • 1 spoonful of sugar.
  • 1 teaspoon of cornstarch.
  • 1 tablespoon of light soy sauce.
  • 1 clove of garlic.

6-En una sarten y con un chorrito de aceite vegetal vamos a freir el diente de ajo.

6-In a frying pan and with a splash of vegetable oil we will fry the garlic clove.

7-Una vez dorado el ajo retiramos y en ese mismo aceite agregaremos, ½ taza de agua, la salsa de tomate, el vinagre , el azúcar y la salsa de soya.

7-Once the garlic is browned, remove it, and in the same oil add ½ cup of water, the tomato sauce, the vinegar, the sugar, and the soy sauce.

8-Mezclamos muy bien y cuando empiece a espesar, agregamos una cucharadita de maizena disuelta en agua asi espesaremos nuestra salsa.

8-Mix very well and when it begins to thicken, add a teaspoon of cornstarch dissolved in water so that our sauce thickens.

9-Una vez realizada la salsa, agregamos las tiras de cerdo, mezclamos todo y servimos inmediatamente para que el cerdo siga crujiente.

9-Once the sauce is made, add the pork strips, mix everything, and serve immediately so that the pork remains crispy.

Listo, ya tenemos nuestro cerdo agridulce perfecto para comer, podemos comerlo solo o acompañarlo con distintas cosas, en esta oportunidad yo lo acompañe con arroz blanco recien hecho, tiras de repollo morado y brotes de soya, que combinan muy bien con el sabor del cerdo.

Ready, we have our perfect sweet and sour pork to eat, we can eat it alone or accompany it with different things, this time I accompanied it with freshly made white rice, purple cabbage strips, and soya shoots, which combine very well with the flavor of the pork.
