CARROT CAKE - An explosion of flavors (No oven)

In case you are looking for a dessert for the week, different and easy to prepare, today I bring you the best Carrot cake I have ever tried.

And best of all: NO oven!

This recipe has a history in my family: My mom is a pastry chef, so when I was a child, on a trip we visited a friends and family, we decided to make a cake to share it during the night, but it had been so delicious, that we all stayed
in love with, and we began to hide it in different areas of the house because we ALL wanted to end it!

I love this cake, and I like to share the good! So today I share this recipe, made by me, based on my mom's recipe.

So, let's do it!

Ok, so you're going to need:

  • 2 cups of wheat flour
  • 1 cup of brown sugar
  • 2 tablespoons ground cinnamon
  • 1 tbsp baking powder or baking soda
  • 3 eggs
  • 1 pinch of salt
  • 3/4 cups of vegetable oil (or oil of your choice)
  • 1 cup orange juice
  • 1/2 cup walnuts or peanuts
  • 500gr of carrot

    Unite the powders

    In a bowl we are going to mix the flour, bicarbonate or baking powder, cinnamon and a pinch of salt.

    In another container, we will begin to beat the eggs, with the oil, and the orange juice.

    Now, add the sugar and the orange zest.

    And beat about two minutes until everything is integrated.

    Then, add the carrot and peanuts. And mix with a wooden palette.

    Once integrated, add the powders in two parts, and mix in an enveloping way.

    And finally, this is the mix


    Ok so, In a large pot, grease with butter, and sprinkle with a little flour.

    Pour the mixture, and shake a little to avoid bubbles.

    Cook over low heat for 30-40 min. We check if it is ready, and let it cool BEFORE unmolding it.


    After this we have the cake, like this:

    Topping

    For topping you´re going to need:

  • 1 cup of cream cheese
  • 1 cup of powdered sugar
  • a pinch of orange zest

    In a bowl, mix the cream cheese, with the powdered sugar and the orange zest (which gives it a magical and delicious touch)

    And now spread on the cake:

    And this is the result.

    Now cut the pieces and enjoy!!!
