Esta es la segunda vez que me aventuro a realizar una versión más ligera de los típicos alfajores de maicena. La primera vez que realicé la versión saludable de estas galletas rellenas no obtuve muy buenos resultados, pues la consistencia no era la deseada. Esta segunda vez probé una receta diferente y debo decir que quedaron mucho mejor que la primera vez que los preparé; de sabor quedaron divinos, pero aún hay algo que sigue sin convencerme...
En esta receta la fécula de maíz no es un ingrediente sustituible, pues es la que le da la textura tan suave a los alfajores que al apenas comerlos se deshacen en tu boca. Todavía quedan muchos días de Cuarentena, por lo que también tengo tiempo de sobra para seguir experimentando y encontrar la receta perfecta de Alfajores Saludables, pero por los momentos aquí les comparto una receta de Alfajores Saludables que estará sujeta a modificaciones en un futuro no muy lejano, jaja.
This is the second time I ventured into a lighter version of the typical alfajores de maicena. The first time I made the healthy version of these filled cookies I didn't get very good results because the consistency was not what I wanted. This second time I tried a different recipe and I must say that they were much better than the first time I prepared them; they were divine in taste, but there is still something that doesn't convince me...
In this recipe, cornstarch is not a substitute ingredient, because it is what gives the alfajores such a smooth texture that they melt in your mouth as soon as you eat them. There are still many days left in Quarantine, so I also have plenty of time to keep experimenting and find the perfect recipe for Alfajores Saludables, but for the moment here I share with you a recipe for Alfajores Saludables that will be subject to modification in the not too distant future, haha.
INGREDIENTES | INGREDIENTS
✔ ½ taza de harina de avena
✔ ½ taza de fécula de maíz (Maicena)
✔ 2 cucharadas de estevia
✔ 3 cucharadas de aceite de coco
✔ ½ cucharadita de polvo para hornear
✔ Ralladura de limón (opcional)
✔ Coco rallado para decorar
✔ Dulce de Leche (la versión saludable en una próxima receta)
✔ ½ cup oatmeal
✔ ½ cup cornstarch
✔ 2 tablespoons of stevia
✔ 3 tablespoons of coconut oil
✔ ½ teaspoon baking powder
✔ Lemon peel (optional)
✔Shredded coconut for decoration
✔ Dulce de Leche (the healthy version in an upcoming recipe) for stuffing
PROCEDIMIENTO | PROCEDURE
➮PASO 1: En un recipiente añadiremos primero los ingredientes secos: harina de avena, fécula de maíz, ralladura de limón, estevia y polvo para hornear. Por último, añadiremos en el aceite de coco.
➮STEP 1: In a bowl, first add the dry ingredients: oat flour, cornstarch, lemon zest, stevia and baking powder. Finally, we will add in the coconut oil.
➮PASO 2: Con ayuda de una paleta integraremos todos los ingredientes y luego procederemos a amasar durante un buen rato. Al comienzo podemos pensar que es imposible que esa masa logre unirse completamente, pero al cabo de un rato verás como la masa comienza a despegarse de tus manos y logra unificarse. Si notas que la masa está demasiado seca añade una o dos cucharadas de agua fría.
➮STEP 2: With the help of a palette we will integrate all the ingredients and then proceed to knead them for a long time. At the beginning we may think that it is impossible for that dough to completely join, but after a while you will see how the dough begins to come off your hands and manages to unify. If you notice that the dough is too dry, add one or two spoonfuls of cold water.
➮PASO 3: Deja reposar la masa durante unos 15 minutos. Con ayuda de un rodillo estira la masa y emplea un cortador de galletas o un vaso del tamaño que desees para cortar la masa. Hornea a 180°C durante unos 10 a 15 minutos aproximadamente, o hasta que comiencen a dorarse por debajo. Está muy atento con el tiempo de horneado, si dejas estas galletitas mucho tiempo en el horno cuando se enfríen se endurecerán mucho y recordemos que los alfajores deben de quedar blandos.
➮STEP 3: Let the dough rest for about 15 minutes. Roll out the dough with a rolling pin and use a cookie cutter or glass of your choice to cut the dough. Bake at 180°C for about 10 to 15 minutes, or until they start to brown underneath. Be very careful with the baking time, if you leave these cookies in the oven for a long time when they get cold they will get very hard and let's remember that the alfajores must be soft.
➮PASO 4: Ahora viene la parte más divertida. Luego de hornear, deja que se enfríen completamente para proceder a armar los alfajores. Rellena con una buena capa de Dulce de Leche (yo utilicé Dulce de Leche sin azúcar que preparé, la receta la compartiré en un próximo post) y forma un sandwich, luego cubre con coco rallado. También puede emplearse chocolate derretido como relleno.
➮STEP 4: Now comes the fun part. After baking, let them cool completely and then proceed to assemble the alfajores. Fill with a good layer of Dulce de Leche (I used sugar free Dulce de Leche I prepared, the recipe I will share in a next post) and form a sandwich, then cover with shredded coconut. Melted chocolate can also be used as a filling.

Con esta receta pueden realizarse seis alfajores de unos 4 centímetros de diámetro aproximadamente.
