Tomatillo and Mango-Pineapple Salsa is a fresh and vibrant condiment that combines the tartness of tomatillos with the sweetness of mango and pineapple. This salsa pairs wonderfully with tortilla chips, grilled meats, or as a topping for tacos and burritos. Here's a simple recipe for making this refreshing salsa.

Ingredients:

  • 1 pound tomatillos, husked, washed, and diced
  • 1 large ripe mango, peeled and diced
  • 1 cup diced pineapple (fresh or canned)
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño or serrano pepper, seeded and finely chopped (optional, for heat)
  • 2 tablespoons lime juice
  • Salt, to taste

Instructions:

  1. Prepare the Tomatillos: Remove the husks from the tomatillos and rinse them under cold water to remove any sticky residue. Dice the tomatillos into small cubes.

  2. Combine the Ingredients: In a large bowl, combine the diced tomatillos, mango, pineapple, red onion, cilantro, and jalapeño (if using). Mix everything together until well combined.

  3. Add Lime Juice and Season: Add the lime juice to the salsa and stir to incorporate. Taste the salsa and add salt as needed to enhance the flavors.

  4. Chill and Serve: For the best flavor, refrigerate the salsa for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.

I love mango in salsas! Yours looks so delicious and there are so many yummy ingredients in it. I have never tried nor seen tomatillos but I guess it's good without them too :) Thank you for sharing your recipe!
