Raw Ginger & Cinnamon Date Bites are delicious, naturally sweet treats with a touch of spice from ginger and cinnamon. They are great as a healthy snack or dessert. Here's how to make them.

Ingredients:

  • 1 cup pitted Medjool dates
  • 1/2 cup raw almonds
  • 1/2 cup raw cashews
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • Optional: 1 tablespoon chia seeds or flaxseed meal for added texture and nutrition

Instructions:

  1. Prepare the Ingredients: If your dates are very dry, soak them in warm water for about 10 minutes to soften them. Drain them well before use.

  2. Process the Nuts: In a food processor, add the almonds and cashews. Pulse until they are coarsely ground but not yet a fine powder. You want a bit of texture.

  3. Add the Dates and Spices: Add the dates, cinnamon, ginger, vanilla extract, and salt to the food processor. If you're using chia seeds or flaxseed meal, add them as well. Process until the mixture is well combined and begins to stick together. If it's too dry, add a teaspoon of water at a time until the desired consistency is achieved.

  4. Form the Bites: Using your hands, roll the mixture into small balls, about 1 inch in diameter. If the mixture is sticky, dampen your hands with water to make it easier to shape.

  5. Chill and Store: Place the date bites on a baking sheet or plate and refrigerate for at least 30 minutes to firm up. Once they're set, transfer them to an airtight container. They can be stored in the refrigerator for up to a week or in the freezer for longer storage.
